Brief Job Description
The Club at Mediterra, a multiple award-winning private club located in Naples, Florida has an opening for an Executive Pastry Chef to join our dynamic team.
The ideal candidate is a highly motivated, passionate, visionary, energetic culinary team member, who is professionally trained or experienced and is capable of performing their assigned duties independently. The Executive Pastry Chef, under the direction of the Director of Culinary Operations, is responsible for overseeing all pastry and bakery operations across the club, including à la carte dining, banquets, special events, member experiences, gourmet retail items, and seasonal offerings. This leader will set the creative vision, maintain the highest standards of quality, mentor a developing pastry team, and collaborate closely with the Director of Culinary Operations to continually elevate the club's culinary identity.
The candidate will participate in menu planning for dessert items along with creating new and unique items. Staying up to date with current trends, techniques, and modern plating is essential. The Pastry Chef will be responsible for preparing quality pastry and baked items including, but not limited to, the following: breakfast pastries, cakes, tortes, tarts, pies, mousses, verrines, breads, ice cream, and other items requested by the membership.

  • Lead, inspire, and develop the pastry team, fostering a culture of learning, consistency, and pride.
  • Uphold and model the club's values of professionalism, respect, and teamwork.
  • Work collaboratively with the culinary and front-of-house leadership to support club-wide success.
  • Create seasonal, innovative, and member-focused dessert menus for all dining venues.
  • Design and execute high-end plated desserts, breads, breakfast pastries, amenities, showpieces, and event-related pastry needs.
  • Develop unique holiday, club tradition, and special-event pastry offerings.
  • Oversee day-to-day pastry production across all outlets.
  • Ensure consistent quality, portioning, and presentation standards.
  • Maintain sanitation, safety, and organizational excellence within all pastry areas.
  • Manage ordering, inventory, and cost controls for pastry and bakery operations.
  • Contribute to budgeting, forecasting, and operational planning.
  • Maintain productive vendor relationships and source premium ingredients thoughtfully.

What We Would Like You to Have
  • 5+ years of progressive pastry leadership experience; private club, luxury resort, fine dining, or high-volume event background preferred.
  • Strong foundation in classic and modern pastry techniques, bread baking, chocolate work, and artistic presentation.
  • Proven leadership ability with a passion for mentoring and team development.
  • Exceptional organizational skills, time management, and attention to detail.
  • Ability to thrive in a collaborative, high-performance, member-focused environment.
  • High-end private club experience level preferred but not required
  • ACF Certification a plus
  • Degree in pastry studies or pastry apprenticeship preferred
  • Must be willing to work flexible schedule, including nights, weekends and holidays
  • Previous baking from scratch experience is required, and a good understanding of time and product management is paramount
  • Ability to understand, and execute banquet event orders and written directions
  • Must be a professional dedicated to the craft, possess a willingness to learn and experiment with modern techniques and presentations
  • Willingness to assist in all aspects of the culinary department to achieve member satisfaction
