Position Summary:

As the Pastry Chef you will be responsible for menu development and training across all pastry departments, communicating and coordinating with managers regarding production needs through different outlets of revenue. Work alongside department sous chefs in training of production, ordering, and production staff management for kitchen.


Key Responsibilities:

  • Development and implementation of menu items with respect to the company values of menu building.
  • Train the pastry chefs for ongoing production
  • Log recipes, notes for success/improvement, note success of sales/popularity
  • Act as final quality check to ensure all items served meet the highest standards in accordance with recipe specification and Threefold quality and consistency standards.
  • Plan and map production, ensuring successful team execution and product integrity.
  • Maintain vendor relationships, equipment maintenance and ordering systems in coordination with the General Manager.
  • Work collaboratively to ensure continuous improvement in quality for guest experience, service, and operational effectiveness & efficiency.
  • Attend all scheduled employee meetings and come prepared to contribute.
  • Manage projects & demands ensuring that direction and guidance is provided and quality standards are achieved.
  • Continually mentor and provide opportunities for growth and advancement through education and development of staff as it relates to food, service, technique and the company values (seasonality, locally sourcing and sustainability)
  • Understand and effectively communicate all policies, procedures, standards, guidelines and training programs to staff, in collaboration with leadership team
  • Provide coaching to team members escalating performance related matters to management as necessary to ensure compliance with Threefold standards.
  • Collaborate and report any and all violations of company policies, rules, standards and procedures.
  • Provide mentorship for new hires to help them assimilate into the company’s culture and understand expectations
  • Responsible for the timely approval and completion of all time and attendance processes, ensuring legal compliance and clear communication with employees.
  • Oversee labor and scheduling requirements to align with business operations, activity levels, and budget considerations.
  • Create and maintain effective training manuals for all culinary positions

Qualifications:

  • 2+ years bakery leadership or relevant similar role in a production bakery or pastry shop
  • In-depth knowledge of bakery techniques, ingredients, and equipment.
  • Strong interpersonal and teaching skills
  • Strong English communication, both written & spoken
  • Excellent understanding of food safety and sanitation regulations.
  • Ability to prioritize time and meet deadlines.
  • Creativity and passion for baking and delivering exceptional flavors and presentation.
  • Excellent problem solving and critical decision making skills.
  • Excellent computer skills with a demonstrated ability and willingness to learn new technologies.
  • Availability to work flexible hours, including weekends and holidays.
  • Ability to stand and walk for extended periods of time
  • Ability to regularly and continuously lift up to 50 pounds
  • Manual dexterity and the ability to perform repetitive motions
  • Frequent walking, standing, bending and reaching
