71Above is seeking an Executive Sous Chef to join our leadership team in a chef-driven, high-volume fine dining kitchen overlooking downtown Los Angeles.

Perched above the Los Angeles skyline, our chef-driven restaurant is seeking an Executive Sous Chef who can help lead a focused, professional team in a fast-paced fine dining environment. Working directly with Executive Chef Javier Lopez, this is an opportunity for a chef who thrives on organization, high standards, and developing strong teams, while executing thoughtful, precise cuisine night after nigh

The Role

  • Lead and manage BOH operations during service alongside the Chef
  • Train, mentor, and develop sous chefs and line cooks
  • Ensure every dish meets recipe, seasoning, and plating standards
  • Maintain prep systems, pars, and kitchen organization that support seamless service
  • Oversee ordering, inventory, and food cost awareness
  • Protect product integrity and minimize waste
  • Maintain food safety and health department compliance
  • Work closely with FOH leadership to ensure smooth, aligned service
