Seeking an Executive Sous Chef for a four star / four diamond property in Detroit
The Executive Sous Chef will be responsible for oversight and management of all culinary operations for 4 star / 4 diamond hotel/casino
Additionally:
· Establish and maintain an environment that promotes a high level of customer service and guest satisfaction for
property's guests.
· Ensure that all menu items are prepared using guidelines set by culinary management.
· Oversee kitchen operations to ensure that all inventory is appropriately stocked.
· Plan customized menus for a variety of special events.
· Operate within pre-established food and labor budget.
· Maximize usage of perishable foods to minimize waste.
· Train and develop staff.
· Ensure that all culinary operations meet state requirements concerning sanitation and hygiene.
· Perform additional responsibilities as assigned.
Qualifications:
· Prior experience as a Sous Chef, preferably in a high-volume, high-quality operation such as a hotel, casino or resort.
· Minimum three years experience as a Sous Chef.
· Previous experience working in food and beverage operations with annual revenues of at least $10 million preferred.
· Four Diamond or Four Star hotel/casino experience preferred.
· High-end hotel or casino environment desired.
