Job Description

As a valuable member of the e11even team, you will deliver championship service in a high-volume environment. You will work alongside and support the Apprentice Cooks, 2nd Cooks and Lead Cooks. As directed by the Chef, you will ensure proper preparation and cooking techniques/processes are implemented.

RESPONSIBILITIES

  • Perform daily counts and create production lists, ensuring that production levels are appropriate to service levels but will not result in product exceeding its shelf life.

  • Train staff in proper techniques.

  • Perform quality checks on each item, and ensure consistency and seasoning for each item.

  • Ensure a high level of cleanliness in work and storage areas.

  • Gather, wash, cut, season, cook, and store quality ingredients in an efficient and effective manner as assigned by the Chef.

  • Provide hands-on support, training and direction to Apprentice Cook, 2nd Cook, Lead Cook, and Utility Attendants while on station to ensure final product, including meat, fish and sauce is presented/plated according to specifications laid out by the Chef.

  • Taste test food for quality assurance daily.

  • Maintain a clean, organized and safe work area in accordance with food safety and health and safety standards and follow all MLSE Health & Safety policies and procedures and in compliance with the provisions of the Occupational Health & Safety Act.

  • Report all equipment problems/maintenance concerns and food product discrepancies to the Chef.

  • Handle/clean kitchen equipment carefully and safely to prevent damage or injury; return equipment to its designated area.

  • Ensure proper storage of all food ingredients in their respective areas, using accurate rotation.

  • Perform butchery responsibilities.

  • Contribute positively to a team-focused environment and maintain a proactive and positive relationship with the front of house staff to ensure guest satisfaction is optimal.

  • Perform other kitchen duties as required.

QUALIFICATIONS

  • Proven experience in high volume restaurant

  • Familiar with ordering and ability to liaise with chef team and Purchasing Supervisor regarding purchasing

  • Must have a valid Food Handlers Certificate

  • Experience in butchery an asset

  • Red Seal Certification an asset

  • Must be punctual and flexible to work evenings and weekends as the need arises

  • Ability to work well under pressure and take initiative in a fast-paced and dynamic environment

  • Excellent interpersonal and communication skills
