Position Overview

Palm House is seeking a skilled and dedicated PM Line Cook to join our dynamic culinary team. The ideal candidate thrives in a fast-paced, high-volume kitchen and is passionate about preparing high-quality, flavorful, and beautifully presented dinner dishes.

As a PM Line Cook, you will play a critical role in ensuring the timely preparation and execution of dinner service, maintaining the highest standards of food quality, presentation, and safety. This position requires efficiency, attention to detail, teamwork, and the ability to adapt to the demands of a luxury hospitality environment.

Key Responsibilities

Food Preparation & Cooking

  • Prepare and cook dinner menu items to order, following established recipes, portion controls, and presentation standards.
  • Set up, organize, and stock workstations with all necessary ingredients, tools, and equipment prior to service.
  • Work efficiently across multiple stations, including grill, sauté, fry, pantry, and other designated areas, ensuring timely and high-quality output.
  • Assist in prep work for the following day’s service as needed to maintain kitchen efficiency.

Food Safety & Sanitation

  • Maintain strict adherence to all food safety, hygiene, and sanitation standards, including HACCP and local health regulations.
  • Ensure all food is stored, prepared, and served at the proper temperatures to prevent contamination.
  • Keep kitchen, prep stations, and equipment clean, organized, and sanitized during and after shifts.
  • Report any safety or maintenance issues immediately to the Chef or Sous Chef.

Collaboration & Teamwork

  • Work closely with fellow cooks, sous chefs, and kitchen staff to ensure smooth service flow and timely execution of dinner service.
  • Communicate proactively with team members to coordinate preparation, plating, and service.
  • Support team efficiency, training, and morale during high-volume periods.

Consistency & Quality Control

  • Ensure every dish meets Palm House standards for flavor, temperature, portion, and presentation.
  • Monitor and maintain consistency across all menu items, adjusting as needed to meet quality standards.
  • Assist in plating and garnishing dishes to maintain visual appeal and guest satisfaction.

Inventory & Supply Management

  • Track ingredient usage and inventory levels, reporting shortages to management promptly.
  • Assist with rotation of stock to maintain freshness and minimize waste.
  • Follow cost-control procedures to optimize efficiency while maintaining quality.

Training & Development

  • Assist in onboarding and training new kitchen staff, ensuring adherence to Palm House standards, procedures, and safety protocols.
  • Share best practices and techniques to support the development of the culinary team.

Attitude & Professionalism

  • Maintain a positive, professional, and collaborative attitude during service and throughout the shift.
  • Demonstrate flexibility, taking on additional responsibilities as required during high-volume dinner service.
  • Uphold Palm House’s standards for professionalism, appearance, and conduct at all times.

Qualifications & Experience

  • Minimum 2+ years of experience as a Line Cook in a fast-paced hotel, resort, or fine dining kitchen.
  • Strong knowledge of culinary techniques, kitchen equipment, and food safety standards.
  • Ability to multitask effectively under pressure while maintaining high quality and presentation standards.
  • Excellent communication, teamwork, and interpersonal skills.
  • Strong attention to detail and consistency in food preparation.
  • Passion for culinary arts and a commitment to personal and professional growth.
  • Availability to work evenings, weekends, and holidays as required.

Physical Requirements

  • Ability to stand for extended periods (up to 8+ hours) during dinner service.

  • Frequent bending, kneeling, reaching, and stretching to access ingredients, tools, and equipment.
