Executive Sushi ChefRelocation Opportunity | Leadership Role

An established, quality-driven hospitality organization is seeking an accomplished Executive Sushi Chef to lead and elevate its sushi program. This is an opportunity for a talented sushi professional to take ownership of culinary standards, menu development, training, execution, and the continued evolution of a high-quality sushi operation.
The ideal candidate combines exceptional technical sushi skills with strong leadership ability. This individual should be equally comfortable behind the sushi counter demonstrating proper technique as they are developing menus, training chefs, managing food costs, establishing standards, and holding a culinary team accountable for consistent execution.
The position is well suited for a chef who takes pride in the craft of sushi, understands the importance of exceptional product and disciplined technique, and is interested in making a meaningful impact on an established restaurant operation.

Key Responsibilities
  •  Lead all aspects of the sushi culinary program, establishing standards for quality, consistency, technique, presentation, and execution. 
  •  Direct, train, mentor, and develop the sushi culinary team while creating a culture of professionalism, accountability, and continuous improvement. 
  •  Maintain exceptional standards for fish fabrication, knife work, rice preparation, nigiri, sashimi, maki, sauces, garnishes, and presentation. 
  •  Evaluate existing recipes, techniques, and procedures and identify opportunities to improve the quality and sophistication of the program. 
  •  Develop new menu items while balancing creativity, authenticity, guest preferences, operational execution, and profitability. 
  •  Establish recipes, specifications, portioning standards, preparation procedures, and training materials to ensure consistency. 
  •  Oversee seafood and specialty ingredient sourcing, purchasing, inventory, yields, product rotation, waste reduction, and food-cost management. 
  •  Build productive vendor relationships and continually evaluate products for quality, availability, and value. 
  •  Maintain rigorous standards for food safety, sanitation, seafood handling, storage, and kitchen organization. 
  •  Manage daily sushi kitchen operations and ensure smooth, timely execution during high-volume service. 
  •  Collaborate closely with restaurant and culinary leadership on menu direction, service standards, special events, and the overall guest experience. 
  •  Remain highly visible and hands-on in daily operations, leading through teaching, demonstration, and example. 
Ideal Background
  •  Significant professional sushi experience in upscale, fine-dining, chef-driven, luxury hospitality, or high-volume restaurant environments
  •  Advanced knowledge of traditional and contemporary sushi preparation, fish fabrication, rice preparation, seafood handling, knife techniques, and presentation. 
  •  Proven experience leading, training, and developing sushi chefs and culinary teams
  •  Previous experience as an Executive Sushi Chef, Head Sushi Chef, Chef de Cuisine, or comparable culinary leadership position strongly preferred. 
  •  Strong understanding of seafood sourcing, yields, purchasing, inventory management, waste reduction, and food-cost control. 
  •  Experience with menu development, recipe creation, costing, and establishing standardized procedures. 
  •  Strong organizational and communication skills with the ability to establish expectations and hold teams accountable. 
  •  A hands-on leadership style and genuine interest in teaching and developing other chefs. 
  •  Ability to maintain exceptional standards while operating in a fast-paced, high-volume environment. 
  •  High level of professionalism, attention to detail, cleanliness, and organization. 
  • Willingness to relocate is required.
