Job description

Join the Culinary Team Behind Major and Minor League Baseball Organizations.

We're hiring a Performance Chef to join our culinary team supporting the Toronto Blue Jays in Dunedin, FL.

What You'll Do: 

This Performance Chef position, in tandem with the Executive Chef and Sr. Sous Chef, will be responsible for managing all culinary aspects of the performance food catering operation for the Toronto Blue Jays in Dunedin, FL. This will include daily kitchen operation management, hands-on supervision of kitchen staff, training and development, and enforcement of standards. The Performance Chef assumes full responsibility for the operation in absence of the Executive Chef. This role must deliver a high standard of service that meets and exceeds the expectations of the Toronto Blue Jays organization.

  • Work with Registered Dietitians to build meals that fit within nutritional guidelines of TBJ nutrition
  • Prepare and deliver both pregame and postgame meals for all homestands
  • Coordinate meals for the team on the road and message details to visiting clubhouse manager
  • Maintain purchasing, receiving and food storage standards at the affiliate site
  • Understand individualized player needs for food allergies, periodization, portions, and specialized diets
  • Adaptable to player needs and schedule changes with a relentless service minded approach
  • Communicate daily with dietitians, affiliate staff, players, and corresponding team members to ensure meals are meeting expectations
  • Documentation of menus, receipts, and vendors utilized at each visiting location
  • Facilitate a system for gathering reliable feedback on menu design and quality
  • Ability to control food waste and identify opportunities of food costs 
What We're Looking For:
  • 2+ years experience working in foodservice
  • Culinary degree
  • ServSafe Food Protection Manager Certification
  • Highly motivated and excellent problem solver
  • Ability to cook authentic meals from Latin American cultures
  • Receptive to feedback
  • Exceptional communication skills, both verbally and in writing
  • The ability to work a non-standard work-week, including nights, weekends and holidays
  • Strong attention to details, especially with presentation of food and meal delivery times
  • Ability to work within multicultural populations and devise menus around the needs of their respective background
