Head Baker / Operations Lead

Lisbonata is looking for an experienced Head Baker / Operations Lead to join our team in Brooklyn, NYC.

We’re searching for someone who thrives in a fast-paced production environment, takes ownership, and is excited to help scale a modern Pasteis de Nata bakery brand focused on quality, consistency, and hospitality.

Responsibilities
  • Lead and manage daily bakery production operations
  • Ensure production targets and quality standards are consistently met
  • Oversee prep, baking, organization, and inventory flow
  • Create and manage team schedules
  • Train and supervise bakery staff
  • Maintain cleanliness, food safety, and operational systems
  • Improve workflow efficiency and kitchen organization
  • Work closely with ownership on growth and expansion initiatives
Requirements
  • 3+ years experience in a Head Baker or bakery leadership position
  • Strong lamination knowledge and experience is a must
  • Strong operational and organizational skills
  • Experience managing teams in a production environment
  • Ability to lead by example and work hands-on during service and production
  • Reliable, detail-oriented, and proactive mindset
