Description:
Oversee and conduct day-to-day operations of the catering department. Responsiblities include but not limited to: Manage event operations, maintain client relationships, Coordinate team roles and scheduling, communicate and coordinate with Venue General Manager(s). Prepare for, attend and manage events, compile packlists, and close outs for catering events.
Work directly with the Administrative Staff, Event Managers, Captains, and Executive Chef as needed to achieve targeted results.
Duties & Responsibilities:
The Catering Event Manager is directly responsible for guest's expectations being exceeded and successful on and off premise events. Following is an overview of general job duties and responsibilities:
  • Fully understand Premier Catering & Events brand, vision, and mission statement and apply those concepts to daily decisions and activities. Completely understand all policies, procedures, standards, specifications, guidelines, and training programs.
  • Obtain new clients for on and off premise catering, establish presence with local businesses and the community to actively solicit new clients. Conduct facility tours, if needed. Use company email to review all events and agendas.
  • Maintain relationships with existing clients through our database, client history, and other means.
  • Review and execute Contracts according to company standards, conduct or attend production meetings, review changes with clients and staff.
  • Seek, train and communicate with catering staff, professionally prepare for, and execute events, ensure that company's vision and standards for all on and off premise events is always adhered to. Ensure that events are loaded out, unpacked, and equipment is in a readiness state post event.
  • Compile billing, closing package, proper accounting, guest satisfaction surveys and contacts. Prepare thank you notes for all events. The Catering Sales manager is also the liaison between the client and the Administrative or Accounting department. It is the Catering Sales Manager's responsibility that all deposits and payments are posted correctly.
  • Please see the Premier Catering Handbook and Management P&P Manual in regard to the operational proficiency that the Catering Sales Manager must possess.
  • The Catering Director will develop an independent and / or structured workflow that accommodates all operations for that division.
  • Work with Restaurant Managers, Executive Chef, Kitchen & Culinary Leads, and / or Director of Operations or ensure standards are upheld and adjusted as necessary.
  • Ensure that all food and products are consistently prepared and served according to recipes, portioning, cooking and serving standards as relevant to catered events.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Ensure that all equipment and facilities are kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
  • Work with Executive Chef to implement changes in menu products. Ensure portion sizes and train staff on use of standard recipe cards for all new menu items.
  • Show initiative towards company and personal development at all times.
  • Provide assistance and support to the Restaurant Managers, Executive Chef, Kitchen & Culinary Leads, and / or Director of Operations as needed.
  • Complete required event reporting, financial reporting and work closely with the company's accounting to ensure proper record keeping.

  • Have knowledge of food and beverage service, generally involving some experience in the industry.
  • Possess basic computer related skills. Microsoft Office, Adobe Photoshop, Adobe PDF. Ability to operate online service platforms such as Tripleseat, Nowsta, Hotscheudles and others.
  • Possess the highest standards for personal appearance and attitude.
  • Possess physical stamina to work on your feet at a high energy level for long periods of time.
  • Possess ability to 50+ hours per week.
  • Must have proficient skills in: Personnel Management, Planning, Fostering Teamwork, Giving Feedback, Customer Service, Resolving Conflict, Verbal Communication, Multi-tasking - Must be Self-Motivated Individual with vision for the future.
