This is an exciting opportunity for a culinary professional who takes pride in precision knife work, product integrity, and the art of whole-animal butchery in a fast-paced, luxury restaurant environment.

What You'll Do
  • Fabricate, portion, trim, and prepare premium cuts of beef, veal, lamb, pork, poultry, and seafood according to CUT standards.
  • Inspect products for quality, freshness, and consistency.
  • Maintain proper yields while minimizing waste and maximizing product utilization.
  • Support daily production needs for service, banquets, and special events.
  • Ensure all products are properly labeled, stored, and rotated following FIFO procedures.
  • Maintain a clean, organized, and sanitary work environment in compliance with all health and safety regulations.
  • Assist with inventory management, receiving, and stock organization.
  • Collaborate closely with Chefs and kitchen leadership to support menu execution and operational excellence.
