Butcher – Gwen Butcher Shop & Restaurant

Curtis Stone’s Gwen—a specialty butcher shop and restaurant in Los Angeles—is seeking a skilled and motivated butcher to join our team.

This is an excellent opportunity for an experienced butcher looking to work in one of Los Angeles’s premier butcher shops or for a talented cook interested in developing a career in whole-animal butchery. The ideal candidate takes pride in their craft, maintains exceptionally high standards, and brings a strong work ethic and eagerness to learn.

Responsibilities
  • Prepare and maintain the retail butcher case, including opening and closing procedures

  • Cut and portion meat for both retail sales and restaurant service

  • Break down beef, pork, lamb, and poultry

  • Produce sausages and other value-added products

  • Assist customers with product selection, preparation methods, and cooking recommendations

  • Receive, inspect, and properly store deliveries

  • Maintain a clean, organized, and sanitary workspace

  • Follow all food-safety, handling, labeling, and storage procedures

  • Minimize waste through careful fabrication and responsible product utilization

  • Safely lift and move items weighing up to 100 pounds

Preferred Qualifications
  • At least one year of experience in a retail butcher shop, grocery meat department, professional kitchen, or similar environment

  • Experience breaking down subprimals of beef, pork, and lamb, as well as poultry

  • Experience making sausages and other prepared meat products

  • Knowledge of meat cuts, charcuterie, fabrication methods, and cooking techniques

  • Strong knife skills and attention to detail

  • Excellent customer-service and communication skills

  • Ability to work efficiently, cleanly, and precisely in a fast-paced environment
