The Copper Cellar Commissary is seeking a Meat Production Team Member at their Knoxville facility.
Responsibilities include a strong knowledge of meat cuts, maintaining accuracy of the product varieties, prepare meat into forms ready for cooking using a variety of actions, including weighing, boning, tying, grinding, cutting and trimming a variety of cuts of meat for distribution to all our restaurants. You will need to keep a clean and sanitary work environment as well as on occasion perform other food production procedures and tasks. Responsible to ensure all equipment is maintained and functioning properly. This individual will be working with current product specifications. Must be quick and efficient with their work and will need to be adaptable to new procedures as they become arise.
JOB REQUIREMENTS
- 2-3 years high volume or institutional meat cutting
- Team Player with a sense of humor
- Smiles easily and often
- Demonstrates the ability to follow established practices
- Can take and follow periodic directional change from Supervisors
- Math skills and understanding of basic conversions
- Must be able to use a digital scale and thermometer
- Must be able to lift 75 lbs. and more on occasion (with assistance)
- Position requires standing, bending, and walking the entire workday
- Safety-conscious approach.
- Good practical butchery skills and hand-eye coordination.
- Good spatial awareness/judgement.
- Attention to detail and dexterity.
- An interest in meat and meat preparation, and food in general.
