Position Title: Chef De Partie - 25 Degrees at The Hollywood Roosevelt

Department: Culinary

Reports to: Sous Chef

Shift: PM Shift (6:00 PM - 2:00 AM) or Overnight Shift (11:00 PM - 7:30 AM); Full-time

Position Summary

The Chef de Partie will provide support to the Sous Chef by ensuring proper execution of all hot and cold foods including appetizers, foods including meats, fish, poultry, starches and vegetables.

Essential Duties and Responsibilities

  • Full awareness of all menu items, recipes, methods of production and presentation standards.
  • Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage, and sanitation.
  • Follow good preservation standards for the proper handling of all food products at the appropriate temperature.
  • Observe and test foods being cooked by tasting and smelling to determine that it is cooked to standard.
  • Maintain cleaning of the preparation and cooking station at all-times following California Health and Safety codes.
  • Ensure presentation of food and plating reflects the standards set forth by Executive Chef.
  • Follow established health and safety standards.
  • Ensure effective communication between employees and secure a team-oriented working environment.
  • Establish and maintain effective inter-departmental working relationships.
  • Ability to meet deadlines and encourage and assist others in achieving this aim.
  • Consults daily with Sous Chef on daily requirements, functions, and pop-up events.
  • Assess quality control and adhere to the hotel’s service and presentation standards.
  • Guides and trains subordinates on a daily basis to ensure high motivation.
  • Set an example for others for personal hygiene, cleanliness, and teamwork.
  • Other duties as assigned.

Kitchen Knowledge

Strong knowledge of professional cooking and knife handling skills.

Understanding and knowledge of safety, sanitation and food handling procedures. Must be efficient with use of kitchen equipment and tools

Education and Work Experience

  • 5+ years of cooking experience in specified area or other related operation required
  • Experience in high volume establishment preferred
  • Previous hospitality industry experience preferred

Certificates, Licenses and Registrations:

  • California ServSafe Food Handler Card

Supervisory Responsibilities

Supervising of the Kitchen team in an orderly, supportive manner.

Reasoning Ability and Computer Skills

Ability to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
