Key Responsibilities
  • The Demi Chef de Partie Pastry is responsible for executing production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry. It is also their responsibility to ensure that assigned section recipe files are maintained and available to assigned staff.
  • They practice batch cooking and preparation (for soufflés, puddings, crème brûlée, and other pastry items) and demonstrate an ongoing understanding of the ingredient consumption required for daily production in accordance with company recipes.
  • They supervise and mentor Commis Pastry in an assigned service station during operational activities and assist in on-the-job training for new hire Pastry staff as directed by the Executive Pastry & Bakery Chef or Chef De Partie Pastry.
  • The Demi Chef de Partie Pastry is always open to guidance from the Executive Pastry & Bakery Chef or Chef de Partie Pastry, with the aim of ensuring that production is executed according to company standards and recipes, and that food waste is kept to a minimum.
  • The Demi Chef de Partie Pastry also maintains a current and accurate knowledge of public health standards, and ensures continuous compliance with all hotel-related public health and food management policies and procedures.

Skills, Knowledge & Expertise
  • Formal qualification in Pastry Arts from a recognized culinary training institution.
  • At least four years of pastry experience with at least one year experience as 1st Commis Pastry
  • Recent experience in high-volume Pastry production preferably from large hotels/resorts or cruise ships.
  • Solid knowledge of international pastry recipes and preparation process
  • Solid knowledge of USPH Standards, Food Safety and Waste Management.
  • Command of the English language, both verbal and written.
  • Understanding of the foundation of guest service; ability and willingness to deliver outstanding service to our guests.
  • Motivation to excel in all aspects of job duties and responsibilities.
  • Personable communicator with outstanding social skills and a warm, friendly, and caring personality.
  • Ability to continuously surprise and delight guests throughout their cruise experience.
  • Commitment to establish and maintain courteous and professional working relationships in a diverse cultural environment.
