Overview

To direct our newly renovated food and beverage operation by ensuring member and their guests receive the highest level of service while dining in our a la carte operations; maintain close ties with the kitchen for a seamless dining experience. Ensures the ambiance, service experience, and décor maintain the highest standards of excellence while directly or indirectly supporting the food and beverage operation.


Responsibilities


Administrative

  • Maintains a working knowledge of Club policies and guidelines as outlined in the Hallbrook Country Club Employee Handbook and Club Rules
  • Supports all activities of the F&B Department for club dining operations.
  • Develops positive working relationships with members, guests, coworkers, and vendors
  • Compiles financial forecast information and assists in the development of the food and beverage department annually.
  • Monitors expenses for the F&B Department and helps plan purchases accordingly.
  • Schedule staff in with the needs of the operations and within the budgeted parameters.
  • Approve employee timecards for semi-monthly payroll and assist with daily timecard adjustments
  • Maintain proper food and beverage menu items, wine lists, and pricing in the POS software
  • Perform interviews, hire, and train needed staff while working in conjunction with HR to ensure appropriate hiring procedures are followed
  • Conducts annual reviews with the assistance of HR and under the approval of the F&B Director
  • Performs monthly inventories and orders supplies as needed.

Membership

  • Maximizes member utilization and satisfaction by providing impeccable service and assisting in delivering excellent culinary offerings
  • Continuous membership interaction to learn both member's names and families while touching tables to ensure service expectations are exceeded
  • Personally handle member and guest incidents and advise the Executive Chef, F&B Director, General Manager, and HR regarding appropriate corrective action(s)

Training & Development

  • Carry out daily pre-shift meetings before service to review training opportunities and new menu items and reinforce general club information
  • Conduct daily post-shift meetings to discuss shift successes and opportunities for improvement
  • Ensure labor standards are set to the desired business volumes and within the budgeted parameters.
  • Develop and maintain an effective orientation and training program with the F&B Director for new and existing staff.
  • Promote and advise in professional development activities for all F&B staff.
  • Review and enhance service standards consistently to ensure membership satisfaction and financial efficiency.
  • Adjust and retrain when necessary.
  • Monitor staff for proper equipment and goods handling to ensure less breakage and loss.
  • Supervise, coach, and counsel staff per the HCC employee manual and code of conduct.
  • Facilitate the safety training of the staff through the guidance and direction of HR.

Operations

  • Safeguards the daily opening and closing duties of the Food and beverage areas
  • Personally responsible for the general cleanliness of the dining room and all areas encompassing F&B service
  • Assists in Casual Dining and Events as needed.
  • Work closely with the Banquet Department to assist in operations when needed.
Requirements:
  • A college degree in a related field or equivalent experience is preferred
  • Five years of fine dining service in a restaurant, Club, or hotel/resort is required
  • Extensive knowledge of culinary and beverage terms is preferred
  • Level I wine Sommelier preferred.
  • Intermediate wine, spirits, and beer knowledge is required
  • Prior experience with POS programming; Club Essential a plus
  • Advanced working knowledge of service standards
  • Ability to read, write, and converse in English required
  • ServSafe or local food handlers card required
  • CPR and AED certification a plus
  • Ability to be on feet for up to 95% of the prescribed shift
  • Ability to lift 40 pounds, stand, bend, stoop, twist, and turn for prolonged periods.
  • The position will require working inside and outside at various times of the year and may require prolonged exposure to sunlight.
