Position Purpose
Maintain cleanliness and organization within all back of house Food & Beverage areas.
Key Responsibilities- Cleans pots, pans and all other cookware utensils.
- Cleans dishware, glassware and eating utensils .
- Maintains superior cleaning and condition of all china, silver & glassware.
- Keeps cookware washing area clean and neat.
- Ensure that dish machines are properly cleaned and maintained. All dish machines will be equipped with proper chemicals to ensure the cleanliness of all wares.
- Replace & maintain soap or chemicals at appropriate levels in all dish machines.
- Knowledge of dishwasher presentation; i.e., How to set up dishwasher; how to clean dishwasher; chemicals and temperature setting of dishwasher.
- Stores cleaned items in the proper location.
- Keeps kitchen floor area clean and free of debris.
- Completes other duties as assigned.
- Knowledge of Floor Maintenance; i.e., equipment used/chemicals used.
- Work directly with cooks to ensure that proper rotation of equipment is available at all times.
- Transport equipment; i.e., carts, equipment.
- Waste removal.
- Follow dumpster procedures.
- Knowledge of chemical use in cleaning - OSHA.
- Perform responsibilities for Banquet functions.
- Perform detarnishing of silverware; i.e., handling and cleaning.
- Any and all reasonable requests of management
