Job Description

Seeking for a Kitchen Manager to join a Bar and Grill Restaurant in Avon, Mentor, Easton, and Columbus, OH.

 

KM Reports to General Manager, Regional General Manager, Director of Operations

Requirements:

The Kitchen Manager position is a full-time salaried management position based on a minimum 50-55-hour work week

Basic Functions

Responsible for all aspects of daily restaurant operations, concentrating on Back of House staff (AKM’s, Line Cooks, Dishwashers). Responsible for hiring quality Back of House employees. Communicate and educate staff regarding food procedures, heating, and holding temperatures. Monitor all aspects of staff training. Provide direction and leadership to co-managers and staff while maintaining employee morale. Work with the management team to successfully reach established company goals. Ensure that deadlines/tasks assigned by the Regional management team are completed. Responsible for monitoring and meeting labor/supplies cost control budgets. Maintain accurate inventories and monitor ordering, invoicing, and receiving systems. Enforce company rules and policies established in the employee handbook. Be actively involved in restaurant operations daily and maintain a professional demeanor at all times.

Specific duties:

Food

Monitor food quality to ensure it meets company standards

Communicate to Commissary issues regarding Production, Facilities or Deliveries

Communicate and educate staff on food preparation procedures/heating and holding temperatures.

Monitor and ensure that daily temperature logs are complete

Know menu items, allergens and procedures

Monitor that procedures are followed

Know inventoried items/yields

Operations

Communicate operation/policy changes to Store Managers

Monitor and organize walk-in coolers and dry storage areas

Be actively involved in daily restaurant operations

Handle Guest Complaints

Know special events that may affect daily operations

Establish specific goals for staff

Monitor Steps of Service

Monitor and establish ordering pars

Establish and monitor opening/closing procedures and daily detail cleaning list for Back and Front of House

Communicate with Regional Operations Managers regarding guest complaints when necessary

Communicate to Facility Maintenance managers when store/equipment repairs are needed

Maintain kitchen cleanliness, including receiving area and dumpster

Create BOH management and staff schedule in HotSchedules

Follow policies and procedures to maintain the safety and security of employees and guests

Staff

Monitor all aspects of staff training

Maintain staff levels in stores

Train and develop staff in accordance with approved training materials

Provide direction and leadership to co-workers and staff while maintaining employee morale

Administer disciplinary action as needed and uphold Company Policies/Procedures

Maintain open and professional communication with managers and staff

Review staff members to ensure goals are established and met

Salary: $58K - 65K DOE
