Title – Restaurant Manager


Reports to: General Manager


Dune Deck Beach Club is seeking passionate Restaurant Manager to join the team for the upcoming season!  The Restaurant Manager is responsible for the leadership and coordination of all Restaurant, Deck and Bar Operations. They will work to maintain and improve operational standards both in the front of the house and back of the house to ensure that all guests receive the highest level of exceptional and genuine service at all times, reflective of international luxury service standards.


The Restaurant Manager will be responsible for the management of all aspects of the operation, including Cost Control (which includes labor, beverage, maintenance, etc.); Revenue Generation; Staff Training and Development, and System Maintenance, guest experience and maintaining and exceeding all service levels


 This position will be Full Time from May 2022 - September 2022.

Key Responsibilities


    • Works to uphold Discovery Land Sequence of Service for all F&B outlets
    • Ensure that all Managers, Supervisors and Coaches are trained at the highest levels of the industry’s service standards.
    • Optimizes seating capacity by constantly monitoring reservation status and professionally allocating tables.
    • Works with Executive Chef, Chefs de Cuisine and Beverage Manager in analyzing menus, prices and overall product offering.
    • Effectively monitor the operation through observation and teamwork, ensuring presence is always on the floor.
    • Prepares annual capital and operational budgets for all F&B service areas and training.
    • Ensures guest histories are maintained and updated on a daily basis.
    • Ensures that outlet employees adhere to hotel policies and standards.
    • Proposes and participates in advertising, promotions and marketing efforts relating to Food & Beverage.
    • To ensure that the Food and Beverage standards are adhered to at all times throughout the operation service areas.
    • Practices and trains up-selling to maximize average spend per cover.
    • Trains all F&B staff in yield management skills.
    • Conducts daily briefings to communicate necessary information and to provide objective and constructive feedback to employees.
    • Take time to listen to employee concerns and deals with any challenges in a timely manner.
    • Controls pilferage and breakage to cut down operational cost
    • Ensures cost effectiveness of resources (material & staff) under his/her control to achieve optimum profitability.
    • To comply with and enforce Discovery Land’s rules and policies.
    • Any and all other duties deemed necessary by a member of management.


    Staff/Training

    • Ensures all department staff are fully trained through on-going on-the-job training
    • Responsible for establishing procedures and training to ensure fast, courteous, and efficient service, and adherence to safety and service guidelines.
    • Ensures attendance on behavioral and vocational training programs, and personally conducts key training for employees in the outlet.
    • Recommends promotions and disciplinary action for subordinates
    • Uses the Discovery Land appraisal system to review the performance of his/her subordinates and determines their development needs.
    • Ensures career development plans and succession planning for subordinates.
    • Assists in recruitment and staffing of department using company hiring standards.
    • Attends behavioral and vocational training in own and related work areas to enhance & develop multi-functionality.
    • Counsels subordinates in work related matters.
    • Develops team’s focus and attention on F&B Service Standards
    • Communicates effectively and genuinely with guests, team members and other departments.

        Skills and Qualifications


        • A degree in Hospitality Management with eight (8) or more years’ experience in a luxury full service environment
        • At least five (5) years’ experience in a similar capacity with exposure in food  and beverage standards in an international setting
        • Strong proven leadership abilities and vision for quality and excellence in hotel operations
        • Knowledgeable of HACCP & local food safety standards
        • Strong leadership skills with the ability to effectively train others and hold them accountable
        • Exceptional organizational and time management skills
        • Familiarity with the requests and preferences of discerning
        • and demanding international clientele;  ability to use existing resources to satisfy such requests
        • Experience in off-site catering and private dining events
        • Excellent written and verbal communication skills in English
