Job description

Essential Job Functions:
• Assists the Executive Chef in all food outlets.
• Maintains a budgeted food cost and labor cost.
• Assists with the development of all menus and creates food ideas.
• Maintains a superior food quality, proper storage and rotation of all food items.
• Gives direction, trains and develops kitchen supervisors and direct reports.
• Assures that all kitchen employees follow the proper dress code.
• Oversee the training of all kitchen employees.
• Maintains proper sanitation policies throughout department.
• Check all food outlets to ensure food is properly prepared and held at the proper temperature for serving.
• Oversee the food deliveries through receiving and F&B buyer.
• Participate in taste testing on all new products with the Executive Chef and
Director of Food & Beverage.
• Responsible for food service for all internal and external catering-banquet events held
on premises.
• Demonstrates knowledge and enforce safety procedures to insure employee safety.
• Oversee the hiring of all food production employees.
• Responsible for immediately informing on-site IGC Agent on duty, Security and Supervisor on Duty of any Internal Control or State Regulation violations related to gaming activity of which you commit, witness or become aware; must report pursuant to company Self-Reporting Policy.
Other Job Functions:
• Perform miscellaneous duties as assigned.
Job Qualifications:
• Experience Required: Minimum 5 years experience as a Sous Chef. Also must be experienced in all phases of kitchen operations including, but not limited to
purchasing, culinary training, menu and dietary planning and administration.
• Education Required: High school diploma or equivalent.
• Skills, Knowledge and/or Abilities Required: Able to wear sanitary gloves when
directly handling food. Ability to lift 50 lb.; ability to communicate effectively with others; understands and complies with all Company and departmental rules and regulations.
• Licenses, Certifications, Bonding, and/or Testing Required: Indiana Gaming
Commission Occupational License - Level 3 and Indiana Alcohol Beverage Permit.
• Other Specialized Requirements: ServSafe certified or ACF/ affiliate, member.
