Job description

Job Title: Bakery Team Lead
Department: Bakery
FLSA: Non-Exempt
Reports to: Bakery Manager
SUMMARY / OBJECTIVE
Efficiently produce large quantities of bakery products each day. Primary production processes are panning up dough, shaping/scoring dough, proofing, and baking, topping, sheeting, frying, of donuts, pastries, and breads while preserving, promoting and protecting the Family Express brand image.
Manage the start-up and ongoing daily operations of the Bakery while preserving, promoting and protecting the Family Express brand image.
ESSENTIAL FUNCTIONS
• Develop, administer, implement and maintain all day-to-day operation policies and procedures of the bakery
• Maintain all quality assurance programs and ensure compliance with any and all federal, state and local regulatory agencies
• Prepare reports, with corroborating documentation, statistics and forecasts on bakery operations
• Dedication to process improvement
• Provide appropriate reporting of risk-related information to Bakery Management
• Maintain knowledge of current developments and trends in food bakery production
• Administer and direct all aspects of the bakery including coaching, training and development of culturally compatible staff
• Assist formulations and production schedules which maximize customer appeal while minimizing ingredient and labor costs
• Control product and raw material waste
• Maintain a safe work environment
• Implement and maintain preventive maintenance schedules for all equipment
• Ensure production schedule accommodates stores need for product delivered on a timely basis
• Train other bakers when needed
• Ensure that baker's areas are kept clean and organized
• Ensure that sanitation and food safety procedures are implemented and followed at all times
• Ability to perform Bakery Administrative Assistant essential functions when necessary
• Special projects as assigned

PHYSICAL REQUIREMENTS
While performing the duties of this job, the employee is required to stand for prolonged periods; work longer than eight (8) hour shifts, reach, climb, balance, stoop, kneel, crouch; talk and hear; taste and smell. The employee must occasionally lift and/or move up to 50 lbs. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to focus.
