What you will have an opportunity to do:

McArthur'sis named after the resort's architectural inspirations serving New American cuisine with hints of the Sonoran Desert delivering a creative fusion of meticulously sourced ingredients brought from farm to table in a menu of comforting delight.

The Cook III will be responsible for maintaining, setting up, producing food and controlling quality of all food items prepared in the different kitchen stations, i.e., meats, fish, vegetables, bread products, sauces, stocks, seasoning, etc.

ESSENTIAL FUNCTIONS

  • Prepare all food items according to standard recipes or, as otherwise specified by supervisor, to ensure consistency of product to the guest; requires transportation of heavy food products.

  • Check and control the proper storage of product, especially on all fresh produce, checking on portion control, to maintain quality product.

  • Keep all refrigeration, storage, and working areas clean, working condition in order to comply with Health Department regulations.

  • Ensure all equipment in working areas is clean and in proper working condition to comply with Health Department regulations.

  • Visually inspect, select and use only the freshest fruits, vegetables, meats and other food products of the highest standard in the preparation of all menu items. Read and employ math skills for following recipes. Prepare requisition for supplies and food items for production in workstation.

This is a full-time position, and you must have availability to work days, nights, weekends, and holidays. Hours are 2pm-10pm. Ability to work grill and Sautee with average of 150 covers per shift.

EDUCATION

  • High School Diploma or equivalent

  • Graduate of an Apprenticeship or accredited Culinary School, preferred

EXPERIENCE

  • At least one (1) year of cooking experience in a professional, fast-paced kitchen

  • Prior hotel / resort experience, preferred

  • Upscale / luxury dining experience, preferred

LICENSES OR CERTIFICATES

  • Maricopa County Food Handler Card

  • ServSafe Food Handler Certification, preferred
