Job Description

OVERVIEW:

A well respected, independent restaurant group seeks a Director of Operations to oversee multiple full service and quick service locations for the brand. This is a growing brand that seeks driven employees who are passionate about delivering great service and elevated cuisine.


JOB DESCRIPTION:

This is a hands on operations role that will lead a team of Regional managers, Culinary leaders and General Managers in a growing southern California Market. This role has many responsibilities including:


Talent Management (Staff and Management)

  • Builds and maintains strong working relationships with all management.Knows peoples minds.
  • Identifies candidates for internal development. Achieves progressive development results.
  • Achieves 95% or better staffing levels.
  • Leads recruitment, hiring and onboarding.Actively networks to support recruitment.
  • Maintains hourly and manager training programs.Participates in manager training scheduling and validation.Ensures training is complete.

Food and Drinks

  • Leads collaborative menu development process (existing and new as well as retail)
  • Manages multiple initiatives simultaneously.Constantly leads edits and improvements.
  • Monitors manager log, restaurant sales and comps for preference and defect trends.
  • Monitors industry food trends. Constantly researchesfornew and enhanced products.
  • Maintains vendor relations and manages rebate programs.
  • Manages Non-Food Vendor Relations: Paper Products, Dishwashing, small wares, equipment.
  • Maintains positive product cost trends.

Operations:

  • Ensures compliance to all service and operating standards.Drives consistency andprofitability.
  • Visits restaurants minimumof 4 per week and gets involved in the service.Completes visit diagnostics.Provides feedbackand directionafter every visit.
  • Monitors best practices to advance company and inform new initiatives.
  • Leads operations meetings.
  • Leads operations in new restaurant openings.
  • Maintains and evolves new opening programs.
  • Maintains and evolves new opening order program, monitors new opening order vs. budgets.
  • Ensures all restaurants achieve 100% health inspections (only pass or A acceptable)
  • Maintains and develops sanitation programs
  • Monitors inspection results and maintains HQ accountability to sanitation expectations.

Systems

  • Maintains restaurant program tools and procedures.
  • Maintains recipes for execution and cost accuracy and manages within cost expectations.
  • Manages labor results through CTUIT/Hot Schedules.
  • Teaches and coaches labor culture.

Financial Management

  • Drives restaurant and company sales. Always seeks outperformance.Drives comp sales growth.
  • Develops promotional efforts and salesmanship in the restaurants.
  • Drives food and beverage cost, and all related P&L lines.Is accountable to all financial results.
  • Monitors restaurant and company payroll/labor and drives consistent or improving results.
  • Monitors restaurant and company operating expenses and drives positive results.


REQUIREMENTS:

Qualified candidates should have:

  • at least 3-5 years of Director of Operations or Regional Management experience in full service restaurant environments with a focus on elevated quality and hospitality (fine casual/fine dining brands preferred).
  • Candidates with experience in New Restaurant Openings are encouraged to apply

  • Open to commuting to multiple restaurants per week
