Overview

Responsible for food production in fine dining restaurant and other ad hoc functions at the club. Supervises food production personnel, assists with food production tasks as needed and ensures that quality and cost standards are consistently attained. Mentor, train and coach sous chefs, supervisors, and line cooks. Works to elevate the culinary experience and culture at Hallbrook Country Club.


Responsibilities

Operations

  • Can proficiently work all a la carte stations in kitchen.
  • Leads team through a la carte service during peak volume.
  • Works in conjunction with front-of-house management team to deliver exemplary service.
  • Develops standardized recipes with other members of the culinary team. Trains staff on expectations of recipes.
  • Menu development: makes seasonal menu change recommendations, responsible for weekly specials.
  • Assists the executive chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production.
  • Assumes responsibility of the fine dining kitchen ensuring staff is engaged and food quality is exceptional.
  • Consistently maintains standards of quality, cost, eye appeal and flavor of foods.
  • Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment.
  • Personally, works in any station as needed.
  • Assists in maintaining security of kitchen, including equipment and food and supply inventories.
  • Checks mise en place before service time and inspects presentation of food items to ensure that quality standards are met.
  • Reports any member and guest complaints to the chef and or FOH managers. Assists in service recovery when needed.
  • Performs other appropriate tasks assigned by the executive chef.

Leadership

  • Creates a strong working relationship with FOH management team.
  • Communicates effectively with F & B team.
  • Promotes and assists with the professional development of culinary staff.
  • Consults with FOH managers and dining service team during daily line-ups.
  • Supervises trains and evaluates kitchen personnel.
  • Is an ambassador for Hallbrook’s Employee Culture

Administrative

  • Monitors kitchen employee’s compliance with posted schedules.
  • Approves payroll & PTO in accordance with Hallbrook’s payroll policy.
  • Attends weekly food and beverage meetings including BEO meeting and weekly chefs meeting.
  • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Responsible for portions of food procurement, delivery, storage and issuing of food items.
Requirements:
  • Culinary Associates Degree &/or 3 years+ relevant kitchen management.
  • 5 Years plus working in a professional kitchen, preferably upscale restaurant, club or hotel.
  • Current Serve Safe or food handlers card required.
  • Must be able to work in a busy environment while maintaining organization, attention to detail and focusing on cleanliness
  • Ability to be on feet for up to 100% of the prescribed shift
  • Ability to lift 50 pounds, able to stand, bend, stoop, twist and turn for prolonged periods of time.
  • The position will require working inside and outside various times of the year
