POSITION SUMMARY

The Café Manager is responsible for the management of daily Café operations for the CIA, in a fast-paced casual dining setting. The Café Manager ensures compliance with all food and beverage (F&B) policies, standards, and procedures for the Café. The Manager actively works on the floor to assist the service team in meeting or exceeding the expectations of customers on a daily basis.

ESSENTIAL RESPONSIBILITIES

  • Manages daily shifts within Apple Pie Bakery Café. Ensures the efficient operation of the Café during the shift, and resolves all guest and operational issues. Responds in a courteous and prompt manner to all guest questions, complaints and/or requests to ensure a high level of guest satisfaction. Ensures all credit and financial transactions are handled in a secure manner using the Point of Sales (POS) system. Monitors the quality of service and food and beverages served to guests, and reports insufficiencies for review and correction. Ensures that all standard operating procedures for bar operations are in place and consistently utilized.
  • Provide management to the Café team members. Interviews, hires, trains, coaches, schedules, disciplines and manages all Café Assistant Managers and staff. Establish goals and objectives for direct reports and conducts annual performance reviews.
  • Manages the Earn and Learn student schedules and hiring for the Café.
  • Serves as the liaison between faculty and food & beverage operations to ensure the successful operation of the Café.
  • Manages and approves timesheets for all direct reports and Earn and Learn students.
  • Manages the maintenance of the Hyde Park Micros POS database and inventory files for the Café.
  • Participates in the Marketing, Social Media and Public Relations efforts of Apple Pie Bakery Café. Develops content and branding, and works directly with CIA Marketing to execute on promotions and events for the Café.
  • Manages all Café inventories including retail product, packaging, ingredients, and supplies. Maintains records of all transfers of products between departments.
  • Assists in the development of operational changes to the Café to increase revenue based on current business environment.
  • Assists in Menu Development for the Café and for internal/external events, including coordinating, managing, formatting and implementing approved menus.
  • Maintains and continually evolves an industry leading beverage program, keeping on trend within Full and Quick Service sectors.
  • Establishes, maintains, and enforces policies and procedures for all Café departments.
  • Manages cake programs for the Café as well as the restaurants, and coordinates delivery of orders to appropriate areas.
  • Manages internal/external catering needs and events for the Café, including menu development, production needs, and display requirements.
  • Researches and develops retail products for the Café and Institute as needed. Innovates retail package design for the Café, corporate gifting, and events, and sources of all necessary components. Coordinates all packaging, pricing, and labeling of retail products, to stay on brand.
  • Develops, executes and maintains product schematics for all Café displays, including seasonal window displays.
  • Works closely with the Assistant Director - Food & Beverage Operations to achieve financial goals and manage operating costs. Assists with financials, reporting, and daily forecasting. Tracks and distributes consolidated monthly financial reports, including P&L statements.
  • Maintains and improves integrated training model of new students to provide consistency in operations.
  • Any and all other duties as assigned.


REQUIRED QUALIFICATIONS

Education:

  • Associate degree required.


Experience:

  • Minimum of two (2) years of experience in a full service restaurant or café operation.
  • Minimum one (1) year of supervisory experience required.


Licenses / Certifications:

  • Servsafe Certification, or ability to obtain following hire.


PREFERRED QUALIFICATIONS

  • Bachelor's degree in Food Service Management, Hotel and Restaurant Management, Hospitality, Culinary Arts, or related major.
  • CIA Graduate preferred.
  • Previous experience with Point of Sales systems, such as Micros.


REQUIRED SKILLS

  • Strong decision making abilities, including the ability to make decisions on the fly.
  • Superior customer service skills, as well as verbal and written communication skills.
  • Strong knowledge of service and food and beverage products in a café concept.
  • Strong teamwork and interpersonal skills; ability to be adaptable, dependable and handle multiple priorities simultaneously.
  • Demonstrated ability to show a high level of service responsiveness to internal customers and effective partnership with colleagues.
  • Must display a high level of energy and self-motivation.
  • Must have a demonstrated history of improved guest experience with measurable results.
  • Strong computer skills with knowledge of programs such as Excel, Microsoft Word, Power Point, Publisher, and Point of Sale Systems.


WORKING CONDITIONS

  • Must be available to work a flexible schedule including nights and weekends as required due to business.
  • Regular work required the ability to stand and walk for extended periods of time, sometimes in excess of eight (8) hours per day. Regular work also requires the frequent use of a computer.
  • Must be able to reach, bend, stoop, and frequently lift up to 30 pounds, or 50 pounds with assistance.
