STARR Restaurants will lead all food and beverage operations at The Nora, anchoring the property with the West Palm Beach debut of Pastis, the iconic New York brasserie, alongside rooftop dining, in-room service, and additional hotel concepts developed in close collaboration with BD Hotels and Sean MacPherson. Together, the partnership is designed to create more than a hotel stay. It is a seamless extension of the district itself, where guests and locals come together through dining, culture, and connection.

This landmark project will help shape the next chapter of hospitality in West Palm Beach and serve as the social anchor of The NORA District.

As we prepare for opening, we are seeking an Executive Pastry Chef to lead the dessert programs across the property, overseeing dessert programs and production for Pastis, rooftop dining, in-room dining, hotel outlets, and on-property events. This is a senior, property-level leadership role for a pastry professional with a refined culinary perspective and the operational discipline required to support a multi-outlet hotel environment. The Executive Pastry Chef will establish the pastry vision for the property, ensuring exceptional product quality, consistency, and creativity while building the systems and team necessary to support a high-performing program.

Working in collaboration with the Culinary Director, Executive Chefs, and hotel leadership team, this role will ensure dessert offerings reflect the standards of STARR Restaurants while supporting the broader hotel dining experience.
Position Overview

  • Lead all pastry and dessert production across Pastis and all hotel outlets, including events, amenities, and in-room dining
    • Partner with culinary leadership on menu strategy, special programming, and cross-outlet collaboration
  • Develop and execute seasonal dessert menus aligned with each concept’s identity and brand standards
    • Maintain exceptional quality, consistency, and presentation across all pastry offerings
  • Oversee pastry department financial performance, including food cost, labor management, purchasing, and inventory control
    • Establish efficient pastry production systems, prep standards, and ordering infrastructure
  • Recruit, train, and develop a high-performing pastry team, including a Pastry Sous Chef
    • Foster a positive, disciplined, and educational kitchen culture while supporting career growth and performance development
    • Maintain staffing levels aligned with operational needs and labor targets
    • Lead by presence during key production cycles and service periods
  • Maintain strict sanitation, safety, and regulatory compliance standards
    • Ensure organized inventory systems, accurate product tracking, and disciplined cost controls through thoughtful purchasing and waste reduction

What We’re Looking For

  • 5–8+ years of progressive pastry leadership experience
    • Experience leading pastry operations within high-volume restaurants or hotel environments
    • Strong administrative and organizational skills including scheduling, purchasing, and inventory management
    • Proven experience hiring, training, and mentoring pastry teams
    • Pre-opening experience preferred
