About the Role:

The Culinary Operations Manager plays a key leadership role in overseeing Back of House (BOH) concession operations across WestWorld and Monterra venues, ensuring seamless execution, food quality, and operational consistency during high-volume events. This position leads concession culinary teams, manages inventory and food safety compliance, and ensures all service areas are fully prepared to deliver exceptional guest experiences. The role also supports catered events executed by the M Culinary kitchen, partnering with culinary and operations teams to maintain smooth service flow, consistency, and high culinary standards.

Key Responsibilities:

  • Oversee BOH concession operations across multiple venues during events, ensuring efficiency, urgency, and operational excellence
  • Lead and supervise culinary concession teams, including staff assignments, pre-shift meetings, and execution standards
  • Plan and manage concession operations based on event schedules, labor plans, and forecasted demand
  • Ensure concession stands are fully stocked, operational, and event-ready prior to opening
  • Maintain food quality, presentation, ticket times, and adherence to service standards
  • Manage inventory processes including ordering, receiving, storage, rotation (FIFO), and waste reduction
  • Monitor food and beverage cost controls and support inventory variance analysis
  • Enforce food safety, sanitation, and regulatory compliance standards across all kitchen and storage areas
  • Support M Culinary catered events by ensuring smooth BOH execution and service consistency
  • Coordinate staffing and support training, coaching, and development of BOH team members
  • Troubleshoot operational challenges in real time and maintain strong communication across culinary and event teams
