Location: Madison, WI
Status: Hourly non-exempt, represented
Supervision: No direct supervisory responsibility

About the Role: As a Butcher I or II in one of our meat departments, you will have the opportunity to grow your skills in meat and seafood and produce high quality meat cuts and seafood products for our customers.
Who You Are: You are looking for a way to utilize your knowledge and experience in meat and seafood to serve our customers and provide them with guidance and information regarding meat and seafood. You're passionate about working in an organization that values and promotes diversity, equity and inclusion.
What You'll Do: At the Butcher I level, you will learn the process and techniques necessary to create an exciting product selection at our meat and seafood counter. You'll collaborate with other members to support the operations of the department. At the Butcher II level, you will lead the efforts to support the areas listed.
  • Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form
  • Shape and tie roasts use a boning knife and twine
  • Cure, smoke, tenderize and preserve meat
  • Assure a safe, efficient, and clean meat department, adhering to safety and cleanliness standards.
  • Stay abreast of industry trends, natural and organic practices, recalls and warnings
  • Order product using SMS as needed, working with the Meat Manager to maintain proper inventory levels
  • Adhere to proper receiving protocols that ensure delivery quality and accurate quantities per invoice
  • Complete inventory and enter product loss into SMS according to established procedures and time frames
  • Maintain effective working relations with suppliers
  • Work closely with the Logistics staff to ensure accurate data management including inventory numbers, ingredients, recipes and correct pricing
  • Assist as needed with daily operations, routines, and procedures. Record quantity of meat received and issued to cooks and keep records of meat transfers.
  • Effectively use all department equipment
  • Comply with all laws, rules and regulations pertaining to the meat department
  • Assist with preparations for Wisconsin Department of Agriculture, Trade and Consumer Protection and other inspections
  • Maintain daily temperature and production logs accurately
  • Greet and offer assistance to customers
  • Treat people fairly, consistently and with respect
  • Know product locations in order to assist customers in finding what they need throughout the store
  • Abide by all Co-op policies and procedures as outlined in the Employee Handbook and other company documents
  • Participate in required training and meetings
  • Perform all other duties as assigned by a supervisor

What You Bring: Your specific qualifications will determine your level as a Butcher I or Butcher II, and each level has a corresponding hourly pay rate. Each level's qualifications and pay are outlined below:
Butcher I ($22.35 / hour)
  • Prior meat department or culinary education or experience, as outlined below:
    • A minimum of 1 year full time (2,000 hours) experience as a clerk in a meat department; OR
    • A minimum of 1 year full time (2,000 hours) experience in protein fabrication for foodservice/restaurant (e.g., breaking down whole poultry, portion-cutting, fileting fish, grinding and sausage making, etc.); OR
    • Completion of 1 year (or equivalent) of a full-time formal education or training program in butchery, meat cutting, culinary arts, or a related field; OR
    • An equivalent combination of education and experience as outlined above.
  • Knowledge of HACCP plan and Servsafe principles
  • A positive attitude and collaborative spirit
  • Outstanding customer service skills
  • Willingness to be open, to learn and take on new responsibilities
  • Regular, predictable attendance
  • Effective communication skills in English
  • Ability to read and comprehend instructions

Butcher II ($23.75 / hour)
  • At least 2 years of experience as a Butcher
  • Knowledge of grades of meat
  • Knowledge of HACCP plan and Servsafe principles

  • Willingness to be open, to learn and take on new responsibilities
  • Regular, predictable attendance
  • Effective communication skills in English

Work Environment: Fast paced retail environment with food service equipment and coolers and in cold/hot working conditions (i.e. cooler or near heated surfaces). Other high to moderate noise including but not limited to computers, cash registers, paging, telephones, music and human voices.
