What does a brewer do?

A brewer is responsible for producing beer by overseeing the entire brewing process, from selecting and preparing ingredients to fermenting, filtering, and packaging the final product. They manage recipes, monitor equipment, and ensure that the beer meets quality and safety standards. Brewers may work in craft breweries, large commercial facilities, or brewpubs, and often handle cleaning, maintenance, and record-keeping tasks as well. Their job requires knowledge of brewing science, attention to detail, and a passion for creating unique beer flavors.

What are the key skills and qualifications needed to thrive as a brewer, and why are they important?

To thrive as a Brewer, you need a solid understanding of fermentation science, recipe formulation, and quality control, often supported by a degree in brewing science or related fields. Familiarity with brewing equipment, lab testing instruments, and safety certifications is important for daily operations. Attention to detail, problem-solving skills, and teamwork make someone stand out in this position. These skills ensure consistently high-quality products, safe production processes, and effective collaboration in a brewery environment.

What are some common challenges brewers face when scaling up from pilot batches to full production?

One of the key challenges brewers encounter when moving from small pilot batches to full-scale production is maintaining consistency in flavor, aroma, and quality. Differences in equipment size, water chemistry, and ingredient sourcing can all impact the final product. Brewers often need to fine-tune recipes and processes, collaborate closely with quality assurance teams, and monitor every stage of the brewing process to ensure the end product matches the original vision. Adapting quickly and learning from each batch is essential for ongoing success in a professional brewery environment.

Job description

Description:

ASAHI BEER USA | OCTOPI BREWING

Waunakee, Wisconsin

From Local Brewery to Global Brand — Right In the Tanks

ABOUT ASAHI BEER USA / OCTOPI BREWING

Founded in 2014 as a Wisconsin contract brewery, Octopi Brewing has spent over a decade brewing and packaging beer, seltzers, RTDs, and sodas for clients nationwide. In 2024, Asahi — brewers of Asahi Super Dry — acquired Octopi, making us the U.S. production home of Super Dry. Today, our 250+ person team of beverage industry pros keeps that same local, quality-first spirit alive at a state-of-the-art facility. We continue to brew/batch many styles of beer, seltzer, and soda in addition to Asahi Super Dry. Our cellar department alone is 30 brewers strong, running production around the clock across five shifts.

THE OPPORTUNITY

Octopi's cellar team keeps a 24/7 operation moving — and as the U.S. home of Asahi Super Dry, that operation is only getting bigger. We're adding brewers across all five shifts to keep pace with real, sustained growth.

WHAT MAKES THIS ROLE GREAT

  • We invest in where you're headed — clear career pathways, planning, and goal setting to help you get there
  • Direct, hands-on work with fermentation and cellar operations
  • Join a 30-person cellar crew that knows the products and processes inside and out

WHAT YOU'LL DO

  • Manage yeast pitching, fermentation, conditioning, filtration, dry hopping, and dealcoholization
  • Keep tanks, lines, and cellar equipment clean, sanitized, and running smoothly (CIP)
  • Track batch data and flag anything that looks off before it becomes a problem
  • Work shoulder-to-shoulder with your shift supervisor and teammates to hit production targets

WHAT YOU BRING

Must-haves:

  • Comfortable on your feet for a full shift in a loud, temperature-varied production environment
  • Reliable, detail-oriented, hard-working, and safety-first

Nice-to-haves:

  • Prior brewing, food/beverage production, or manufacturing experience

BENEFITS & PERKS

  • Medical, dental, and vision coverage — effective the 1st of the month after 30 days
  • Company-paid life, short-term, and long-term disability insurance
  • 401(k) eligible after 3 months, with company match — 100% up to 3%, 50% on the next 2%
  • 120 hours of PTO annually, with accrual that grows the longer you're here
  • 9 paid holidays (if they fall on your scheduled workday)
  • Eligible for annual company performance bonus
  • A free beer after shift, because you earned it

CURRENTLY HIRING FOR

  • 2nd Shift | Monday – Thursday | 4pm – 2am — Openings available
  • Weekend Day | Friday – Sunday | 6am – 6pm — Opening Available
  • Weekend Night | Friday – Sunday | 6pm – 6am — Opening Available

PAY BY SHIFT

Pay starts at $22.00/hr - $26.00/hr based on experience, with growth up to $34.00/hr through our tiered Brewer Career Matrix — whether you build that experience here or bring it with you, already brewed. Shifts outside of 1st shift include an additional shift differential on top of that base — never a lower starting rate, just added pay for the shift.

  • 1st Shift — $22.00/hr (minimal base rate)
  • 2nd Shift — $22.00/hr base + $3.00/hr shift differential = $25.00/hr (minimal total rate)
  • 3rd Shift — $22.00/hr base + $4.00/hr shift differential = $26.00/hr (minimal total rate)
  • Weekend Day — $22.00/hr base + $5.75/hr shift differential = $27.75/hr (minimal total rate)
