Responsibilities:
- Prepare and serve high-quality sushi dishes to customers according to established recipes and standards
- Ensure the freshness and quality of ingredients used in sushi preparation
- Maintain a clean and organized work area, adhering to food safety and sanitation guidelines
- Collaborate with the kitchen team to coordinate sushi orders and maintain efficient service
- Stay updated with industry trends and new techniques in sushi preparation and presentation
- Provide excellent customer service and address any customer inquiries or special requests


Requirements:
- Proven experience as a Sushi Chef or similar role, with a minimum of 2 years in a high-volume restaurant or catering setting
- In-depth knowledge of various sushi types, ingredients, and preparation techniques
- Proficiency in sushi knife skills and ability to handle and prepare raw fish safely
- Strong understanding of food safety and sanitation practices
- Ability to work efficiently under pressure and in a fast-paced environment
- Excellent communication and teamwork skills
- Attention to detail and strong organizational skills
- Flexibility to work evenings, weekends, and holidays as required


Preferred Qualifications:
- Experience with traditional Japanese cuisine and other Asian cooking techniques
- Creativity and ability to develop unique and innovative sushi recipes
- Experience in menu planning and cost control

General Accountabilities
Inspects and clean food preparation areas or serving areas to ensure safe and sanitary food-handling practices.
Ensures food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.
Ensures freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
Seasons and cooks food according to recipes or personal judgment and experience.
Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods.
Observes and tests foods to determine if they have been cooked sufficiently.
Washes, peels, cuts, and seeds fruits and vegetables to prepare them for consumption.
Carves and trims meats for hot or cold service.
Consults with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs.
Coordinates and supervises work of kitchen staff.
