DESCRIPTION:
We are seeking a talented Sous Chef for a new restaurant opening in Delray Beach, FL. The ideal candidate should have extensive pre-opening and opening experience and a solid background in menu development with exposure to high-volume operations ($5M++) and expertise in Italian cuisine and high volume, fine dining. The Sous Chef will help oversee all activity in the kitchen, including staff training, budgeting, COGs control, scheduling, inventory, production, and health/safety protocols.

Responsibilities include (but are not limited to):
- Make periodic and regular inspections of units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
- Coordinate all training activities for kitchen, bakery, butcher shop and other production and service employees, including the identification and analysis of training needs and the design and implementation of programs to address these deficiencies.
- Assist with developing recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints; participate in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development.
- Assist as requested in areas such as plate presentation, special function menu planning and the design of new service areas.
- Prepare operational reports and analyses setting forth progress and adverse trends and make appropriate recommendations.
- Perform other related duties incidental to the work described herein.
REQUIREMENTS:
- Two years of progressive management experience in high-volume, chef-driven restaurants.
- Top line threshold of $5-7mm.
- Prior Italian cuisine experience required.
- Restaurant opening/pre-opening experience is required.
- Prior experience as a Sous or Jr. Sous Chef.
- Prior experience training, purchasing and labor control.
- Excellent communication skills. Spanish speaking a plus!
- Health and safety code expertise.
