Job Summary

The Pizzeria Lola Food Trailer Operations Lead supports Pizzeria Lola’s Culinary team by leading the daily operations of our wood-fired Pizza Trailer located at Indeed Brewing Company in Northeast Minneapolis.


Core Responsibilities (including but not limited to)

  • Lead operations at the Pizzeria Lola food trailer, including opening and closing, ordering, service execution, and basic trailer maintenance.

  • Complete daily shift report and temperature logs as directed by Pizzeria Lola Culinary Team

  • Fulfill “dine-in” guest orders (guest order via qr code) as well as third-party delivery.

  • Facilitate proactive daily ordering from commissary for next-day product delivery

  • Facilitate excellent guest experience

  • Execute the Pizza Trailer menu to Pizzeria Lola’s specifications and standards.

  • Facilitate catering events in The OxTaproom in conjunction with the Executive Chef and/or other members of the Pizzeria Lola leadership team

  • Maintain a positive and professional relationship with the Indeed Brewing staff and management team

You’re a good candidate for this position if:

  • You have a good understanding of pizza dough management

  • You have wood-fired oven and/or pizza experience

  • You have strong interpersonal skills

  • You are available Thursday - Monday for primarily afternoon and evening shifts

  • You have at least 2 years experience in a fast-paced food service environment

  • Conversational English necessary in order to communicate with guests

  • Conversational Spanish to communicate with team members

  • Working knowledge of Google Suite (ability to fill out daily spreadsheets)


Nice to have but not required:

  • Leadership experience in fast-paced food service environment

  • Basic understanding of POS system (Toast)

  • Counter service and/or guest-facing service experience

  • ServSafe or Certified Food Protection Manager
