Production - Dough Mixer

Job Summary:

The production dough mixer will read raw ingredient production paperwork and follow the recipe as provided, then mix. The mixer will then move the bowl to the lift and incorporate the dough into the production line as instructed. Upkeep with the processing of information is extremely important to the success in this role. Accuracy of temperature readings and development times is a must. 

Duties/Responsibilities:

  • Ingredient Mix: Accurately measure and weigh raw ingredients (flour, water, yeast, etc.) and load them into industrial mixers in the correct sequence.
  • Equipment: Operate, monitor, and tend industrial mixing equipment and related machinery, ensuring proper mixing cycles and speeds.
  • Monitor Process: Monitor dough consistency, temperature, and development times, adjusting as needed to meet product specifications.
  • Paperwork/Recording: Record batch information, ingredient lot numbers, and production data on batch sheets or digital systems.
  • Sanitizing (completed by Sanitation team): Clean and sanitize mixing equipment and surrounding work areas according to sanitation standard operating procedures (SSOPs), adhering to Good Manufacturing Practices (GMPs).
  • Food Safety Protocol: Follow all food safety, allergen control, and workplace safety procedures, including wearing required PPE.
  • Cleanliness: Maintain a clean, organized, and safe work area.
  • Timing & Line Balance: Coordinate with production line leaders to ensure dough is delivered to dividers/shapers on time to maintain production flow.
  • Other: Performs other related duties as requested by management.


Requirements

Required Skills/Abilities:

  • Experience: Previous experience in food production, commercial baking, or manufacturing is preferred.
  • Technical Skills: Ability to read/interpret recipes and formulas, understand basic math for scaling ingredients, and operate industrial machinery.
  • Physical Requirements: Ability to stand for 8-12-hour shifts in a high-heat environment and lift/carry up to 50-55 lbs.
  • Attention to Detail: High accuracy in measuring and following specific, rigorous procedures.
  • Communication & Teamwork: Strong teamwork skills and the ability to work in a fast-paced environment.
  • Bilingual: English & Spanish is a plus

                      Safety Conscious: Comply with all company safety rules and OSHA regulations.
