THE ROLE
The Apprentice Cook is an on-call position that performs basic, routine kitchen duties for the Lansing Center Food and Beverage Department, as well as all Legends Global managed facilities and events. The Apprentice Cook shall assist in food preparation, food production, food plate-up and clean-up for all events, to provide superior experience and service. The Apprentice Cook will adhere to organizational and departmental policies and procedures designed to promote efficiency of operation and quality of service.
Essential Duties and Responsibilities
Assists with food preparation, food production, plate-up, and clean-up. Supports storing and stocking food and supply deliveries in designated areas, following established guidelines. Ensures proper washing and handling of food items in compliance with federal, state, and local standards, codes, and guidelines.
Responsible for the proper handling and monitoring of cold and hot foods, maintaining compliance with local, state, and federal health standards. Assists in the organization of event food products and supplies, and consistently prepares food following established quality, production, and portion standards. Maintains cleanliness of workstations and performs cutting and cooking of foods as instructed.
Cleans kitchen equipment, coolers, storage areas, and other designated areas as assigned, and ensures proper labeling of all food products. Provides a safe work environment free of harassment, ensuring compliance with all Legends Global policies, applicable OSHA standards, Health Department standards, and local, state, and federal laws, including the Americans with Disabilities Act of 1990.
Adheres to Legends Global as well as Food and Beverage departmental policies and procedures, and progressively develops skills related to the safe use of kitchen utensils and equipment, including but not limited to knives, choppers, steamers, tilt skillets, ovens, fryers, grills, mixers, and microwaves.
This position is on-call and requires irregular schedules, including evenings, weekends, and holidays. Work assignments may not always be directly related to job specifications, and schedules are subject to change based on events. Performs other duties as assigned.

Education and/or Experience
High school diploma or equivalent GED.
Minimum one (1) year of kitchen experience in the Food and Beverage industry preferably in a high volume-feeding environment such as a convention center, stadium or other public assembly facility.
Skills and Abilities
Demonstrates the ability to interact positively with others in a courteous, cooperative, and professional manner, projecting a professional attitude and maintaining a positive public image. Maintains consistent and timely attendance while exhibiting excellent interpersonal skills. Works safely and efficiently with culinary tools and equipment, performing basic mathematical functions as needed.
Maintains clean and organized work habits, demonstrates flexibility, and exhibits a positive attitude. Communicates effectively through verbal, listening, and written skills in English, and can work independently with minimal direction. Assists in food production, including food preparation, frying, grilling, baking, and sautรฉing, while performing duties in a high-volume, fast-paced environment and handling multiple tasks simultaneously.

Able to perform job functions in various weather conditions and withstand exposure to cold, heat, rain, dust, noise, fumes, food allergens, wet floors, water, and cleaning agents. Adheres to uniform standards and assists in the sorting of pots, pans, dishware, and service ware.
