Chef de Partie

AAA Rated / 4 Diamond Restaurant

Position Summary

We are seeking a skilled and detail-oriented Chef de Partie to join our culinary team at a high-volume, AAA Four Diamond restaurant. This role is responsible for executing elevated batch cooking, pre-made production, mise en place, and station preparation while maintaining the highest standards of quality, consistency, sanitation, and presentation expected in a luxury dining environment.

The ideal candidate possesses strong organizational skills, refined culinary techniques, and the ability to produce large-scale preparations without compromising flavor, texture, or presentation standards.

Key ResponsibilitiesCulinary Production
  • Prepare and execute batch recipes, sauces, stocks, soups, proteins, starches, and specialty components according to standardized recipes and Four Diamond quality expectations.
  • Produce high-quality pre-made items and mise en place for restaurant, banquet, and specialty dining operations.
  • Maintain consistency in flavor profiles, portioning, presentation, and cooking methods across all production.
  • Assist with advanced preparation techniques including vacuum sealing, marinating, braising, reductions, pickling, curing, and sous vide production as directed.
  • Ensure all prep and production items are properly labeled, dated, rotated, and stored following HACCP and food safety standards.
  • Monitor product yields and minimize waste through proper utilization and batch management.
Station & Kitchen Operations
  • Maintain a clean, organized, and efficient workstation at all times.
  • Coordinate with Sous Chefs and Executive Chef regarding prep priorities, pars, banquet forecasts, and production schedules.
  • Support service periods as needed by assisting hot line, garde manger, banquet, or specialty stations.
  • Ensure all equipment is operated safely and maintained properly.
  • Participate in inventory counts, receiving, and product quality inspections.
Quality & Standards
  • Uphold AAA Four Diamond culinary standards, luxury presentation expectations, and fine dining execution.
  • Maintain strict adherence to sanitation, cleanliness, and food handling procedures.
  • Follow all company recipes, plating guides, and culinary specifications precisely.
  • Demonstrate urgency, professionalism, and attention to detail in a fast-paced luxury environment.
Team Collaboration
  • Work collaboratively with culinary leadership and fellow cooks to ensure smooth kitchen operations.
  • Assist with training and mentoring junior cooks and commis as needed.
  • Communicate effectively regarding production shortages, equipment issues, and operational needs.
Qualifications
  • Minimum 2–3 years of culinary experience in upscale, luxury hotel, fine dining, or Four Diamond/Five Star environments preferred.
