Luxury resort seeks experienced Pastry Sous Chef to prepare desserts and baked goods for all restaurants and coffee bars.
 
Qualifications:
  • A minimum of two years of previous pastry experience preferred  
  • Knowledge of pastry  
  • Ability to work a flexible schedule including weekends and holidays  
  • Luxury hotel experience, a plus  
Responsibilities:
  • Managing, in conjunction with the Pastry Chef, the inventory, control of all equipment and china required for events and restaurants  
  • Prepare and order all items for all menus, creates order sheets and inventory systems to always ensure proper stock levels   
  • Supports on creation of a weekly schedule for all pastry Associates, managing payroll 
  • Supports and monitors execution and delivery of the amenity program for the hotel 
  • Attend BEO meetings, in absence of pastry chef communicate information to pastry department, oversee pastry production flow and adjust in order to adhere to control procedures for cost and quality 
  • Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers of kitchen and service 
  • Check to see that all equipment in the kitchen is clean and in proper working condition, review daily cleanliness practices with culinary team and keep up with daily cleaning schedule 
  • Ensure the department abides by all safety and sanitation policies 
  • Have the desire to create WOW moments  
  • Perform additional duties as assigned that may be outside the scope of duties, based on business needs
