In addition to working directly for an independent Owner/Operator, Overnight Team Members gain life experience that goes far beyond serving a great product in a friendly environment. They are the behind-the-scenes engine that makes every day of service possible — resetting the restaurant, preparing food for the next business day, and ensuring the building, equipment, and inventory are ready before the first guest arrives.

  • Full-time $17/hr: Must meet certain availability thresholds

Reset the Restaurant for Next-Day Success

  • Complete all post-service cleaning tasks to CFA standards before shift end.
  • Ensure the kitchen, dining room, restrooms, and exterior are guest-ready at open.

Execute Overnight Prep with Precision

  • Prepare food items for the next business day according to par levels and recipe standards.
  • Maintain 100% alignment with CFA food safety, dating, and storage protocols.

Own the Truck and Inventory Process

  • Unload the delivery truck efficiently and accurately.
  • Organize stockrooms, walk-ins, and freezers using FIFO and proper labeling so the opening team can find anything in seconds.

Maintain Facilities and Equipment

  • Complete scheduled preventive maintenance on kitchen equipment and facilities.
  • Identify and report equipment issues early to prevent service disruption.
  • Ensure cleaning of hoods, fryers, floors, drains, and other deep-clean items on the assigned cadence.

Ensure Sanitation and Safety Compliance

  • Receive zero critical violations in internal or external food safety audits.
  • Follow correct procedures for chemical handling, equipment lockout, and personal safety throughout the shift.

Support Overnight Crew Rhythm and Efficiency

  • Stay ahead of the closing and prep checklists without being asked.
  • Communicate clearly with the Overnight Lead and adapt as priorities shift.

Promote a Calm and Focused Overnight Environment

  • Model emotional control, presence under pressure, and hustle with purpose during long, independent shifts.
