Job description

Job Overview

We are seeking a talented and experienced Pastry Chef to join our culinary team at LR Palm House. As the Pastry Chef, you will be responsible for creating exquisite desserts and baked goods that enhance the overall dining experience for our guests. This role requires a blend of creativity, leadership, precision, and technical baking expertise. You will lead the pastry kitchen, oversee production, manage inventory, and collaborate closely with the culinary team to deliver high-quality food and presentation.


Key ResponsibilitiesDessert Creation
  • Develop and prepare a variety of high-quality pastries, cakes, breads, and desserts in accordance with LR Palm House standards and seasonal themes.

  • Ensure consistent quality in flavor, texture, and visual appeal.

Menu Development
  • Design and innovate dessert menus, including special offerings for banquets, weddings, and other events.

  • Customize desserts based on guest preferences, themes, or dietary restrictions.

Quality Control
  • Ensure all baked goods meet brand standards in terms of taste, appearance, and freshness.

  • Conduct regular tastings and quality checks.

Inventory Management
  • Manage ordering and inventory of pastry ingredients and kitchen supplies.

  • Monitor stock levels and control waste through proper storage and FIFO practices.

Team Leadership
  • Supervise and train pastry team members.

  • Delegate tasks, provide coaching, and ensure efficient kitchen operations.

  • Lead by example in maintaining high standards of professionalism and cleanliness.

Sanitation and Safety
  • Comply with all food safety regulations and sanitation guidelines.

  • Maintain a clean, organized, and HACCP-compliant work environment.

Guest Interaction
  • Occasionally engage with guests for feedback, special requests, or dietary accommodations.

  • Collaborate with the front-of-house team for custom dessert presentations.

Collaboration
  • Work closely with the Executive Chef and broader culinary team to ensure smooth integration of pastry offerings into all meal services.

  • Support other departments during special events and holidays as needed.


Qualifications
  • Experience: Proven experience as a Pastry Chef or in a senior pastry role within a high-end hotel, fine dining restaurant, or luxury catering environment.

  • Education: Culinary degree or equivalent experience preferred. Specialized training in pastry or baking is a plus.


Specific Job Knowledge, Skills and Abilities
  • Strong knowledge of classic and modern baking techniques, dessert composition, and flavor pairings.

  • Ability to create aesthetically pleasing and innovative plated desserts and pastries.

  • Strong organizational, time management, and leadership skills.

  • Experience in managing a small team and delegating effectively.

  • Proficiency in pastry equipment and kitchen technology.

Licenses or Certificates

Grooming Standards

Physical Requirements
  • Must be able to stand and walk for extended periods (up to 10 hours per shift).

  • Ability to lift, carry, and transport up to 20 lbs regularly; occasional lifting of up to 40 lbs may be required.

  • Manual dexterity for handling delicate pastry tools and decorating intricate items.

  • Ability to work in a hot, fast-paced kitchen environment.

  • Must be able to bend, reach, twist, and perform repetitive tasks.

  • Ability to visually inspect pastries and ingredients for quality assurance.
