Job Summary:

We are currently seeking an enthusiastic Butcher to join our team. The Butcher is responsible for contributing to the success of our objectives by consistently delivering impeccably prepared, top-quality meats that align with our commitment to culinary excellence and elevate the overall dining experience for our discerning patrons. This role requires meticulous attention to detail, a passion for the art of butchery, and a collaborative spirit to seamlessly integrate into our high-performing culinary team.

The ideal candidate will have a strong knowledge of meat cuts, excellent knife skills, and a commitment to maintaining the highest standards of quality and safety. The Butcher will be responsible for preparing, portioning, and packaging various cuts of meat while ensuring a clean and organized work environment.

Essential Functions / Major Responsibilities:

  • Meat Preparation:
    • Receive, inspect, and store incoming meat deliveries.
    • Break down whole carcasses into smaller cuts following established cutting and trimming guidelines.
    • Prepare specialized cuts according to customer preferences and specifications.
  • Quality Control:
    • Ensure all meat products meet quality and safety standards.
    • Monitor and maintain proper temperature and storage conditions for meat products.
    • Implement and follow food safety and sanitation procedures.
  • Customer Service:
    • Assist customers in selecting the right cuts of meat and provide information on cooking methods and recommendations.
    • Fulfill custom orders and special requests from customers.
    • Provide excellent customer service by addressing inquiries and concerns professionally.
  • Inventory Management:
    • Track and manage inventory levels to minimize waste and ensure freshness.
    • Rotate stock and discard expired or spoiled products.
    • Assist in placing orders for meat supplies as needed.
  • Equipment Maintenance:
    • Regularly clean and maintain butchering tools, equipment, and work areas.
    • Report any equipment issues or maintenance needs promptly.
  • Adhere to all company safety and sanitation policies and procedures.
  • Ensure compliance with all company policies, procedures, and laws including health and safety standards.

Required Skills / Abilities / Competencies:

  • Proven experience as a Butcher in a retail or meat processing setting.
  • In-depth knowledge of different meat cuts and processing techniques.
  • Strong knife skills and the ability to use cutting and grinding equipment.
  • Knowledge of food safety regulations and best practices.
  • Excellent customer service and communication skills.
  • Physical strength and stamina to handle heavy meat products.
  • Promote the culture, values, and mission of Restaurant K.

Education and Experience:

  • Minimum 2 years of experience as a server in a Casual or Fine Dining establishment, is plus but not required.
  • High school diploma or equivalent.
  • Formal training in butchery or a related field is a plus.
  • Ability to acquire a valid Texas Food Handler Card within 30 days of hiring.
  • To inspire people to embrace different cultures of the world.

Work Environment:

  • This job entails frequent exposure to high temperatures and extreme cold. There is frequent contact/immersion of hands in water and sanitation solutions; and contact with produce items, dairy products, and frequent allergen-related items such as nuts, citrus, peanut butter, cinnamon, etc.
  • Requires working under stressful conditions or working irregular hours.
  • May be requested to work weekends for special events.
  • Must be able to work safely in a noisy area.

Physical Requirements:

  • Be able to reach, bend, and frequently lift 30 pounds.
  • Must have the stamina to work a minimum of 40 hours per week.
  • Must be able to stand for periods of up to eight (8) hours.
  • Must be able to lift fifty (50) pounds at a time.
