We are currently looking for an experienced full-time Sous Chef to join our kitchen staff. The ideal candidate would be a self-starter and team player who not only has a passion for cooking but enjoys working with people and has the desire to grow and take on more responsibility in the kitchen.  


Hours:


Full time. Flexible hours and able to work weekdays, weekends and holidays.


Job Summary:


As the Sous Chef, you will play an integral and leadership role in the daily operations of the Food and Beverage Operations (O’Neill’s Restaurant, Banquet Events, and On Course Food Station).  You will directly oversee the daily Food and Beverage Operations. You will help ensure that guests have an enjoyable & memorable experience(s) at Arroyo Trabuco Golf Club. In Addition, ensure that the entire staff is organized, prepared and set up for success to assist any guests or staff member in any way possible.



Responsibilities include but are not limited to:


  • Effectively manage entire staff in absence of Executive Chef.
  • Effectively communicate to the Executive Chef
  • To be available to help cover shifts when staff calls out / on vacation or elevated business levels in O’Neill’s restaurant, holidays, and banquet events.
  • Responsible for planning and directing food preparation in the kitchen for O’Neill’s restaurant, banquet events, and on course food station.
  • Must have the job knowledge to work or organize any station in the kitchen, hot line, prep, banquet prep.
  • Ensure that all products are ordered according to product specifications and received in correct unit count, condition and deliveries are performed in accordance with the restaurant’s receiving policies and procedures.
  • Ensure that all food products are consistently rotated, prepared, and served according to the recipes, portioning, cooking, and serving standards.
  • To ensure that all kitchen storage areas (coolers, dry storage, back dock area) are kept clean and organized.
  • Responsible for training staff in methods of cooking, preparation, plate presentation, portion, and safe operation of all kitchen equipment.
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.
  • Responsible for the training of kitchen personnel in safe operation of all kitchen equipment and utensils.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices.
  • Check and maintain proper food holding refrigeration temperature control points.
  • Other duties as assigned.


Position Requirements:


  • 2 or more years of experience in a fast paced, fine dining restaurant.
  •  Culinary School is preferred.
  • Must be able to work flexible hours on weekdays, weekends and holidays.
  • Possess current food handler certifications required to work in a restaurant
  • Ability to manage other staff in a professional manner.
