  • Food Preparation - Prepares/assembles hot/cold food (salads, sandwiches, fillings, and bakery) in Food Production Center for delivery to site partners.  Accurately segregates product according to CBORD requisitions per campus and routes to appropriate locations.  Follows recipes/instructions to ensure product accuracy, including weighing/measuring ingredients.  Meets productivity guidelines.  Ability to manage high volume to meet delivery deadlines. 
  • Quality - Ensures that all products meet quality standards for taste, appearance, and freshness.  Notifies appropriate personnel if finished item does not meet standard and follows through to resolution.  Ensures retail/nutrition labels are printed and affixed clearly and accurately to products for resale, using appropriate "use by" / expiration dates.  Demonstrates a high level of attention to detail.
  • Compliance - Attends mandatory education and in-services and team meetings; follows ADVENTHEALTH and NS Policies & Procedures, and SOPs; works toward department goals and objectives.  Wears approved uniform and maintains a professional appearance, including ADVENTHEALTH ID badge.  Handles inventory, supplies and equipment properly; takes action to reduce waste.  Demonstrates knowledge of Nutritional Services compliance information for regulatory agencies.
  • Equipment - Demonstrates competency in the use, set-up, cleaning, and breakdown of all commercial equipment needed in specific work area.  Handles equipment safely and carefully to minimize damage. Maintains, cleans, and uses equipment per specifications to promote longevity and function.  Ability to use a scale, scoops, knives, an industrial mixer, a vacuum sealer, tipper tie
  • machine, microwave, oven, etc depending on production needs.  Ability to use a computer, mouse, keyboard, and the Microsoft operating system.
  • Recipes - Demonstrates ability to read and follow recipes.  Ensures accuracy so products match CBORD portion and yield.  Reports variances to supervisor.  Able to learn new recipes, products, and processes quickly.
  • Food Safety - Follows HACCP guidelines for food safety.  Monitors and records food temperatures accurately and timely. Follows FIFO method of product rotation.  Covers, labels and dates items according to shelf life document.  Completes all logs and paperwork completely and timely. 

 

What You Will Need: Required:
  • 2-year experience in institutional food preparation
  • Creative, innovative, and receptive to change
  • Ability to work well in a fast-paced environment
  • Ability to display positive and supportive attitude toward diverse employees
  • Ability to use a computer, mouse, and keyboard effectively
Preferred:
  • Experience in high volume food service production
  • Bilingual-English/Spanish
  • HACCP Guidelines
  • FDA Food Code
  • Safe Staff or ServSafe Certification
  Job Summary:  

Actively participates in outstanding customer service and accepts responsibility in maintaining relationships that are equally respectful to all.  Responsible for quantity food preparation in the Food Production Center (FPC) according to recipe specifications and procedures; products meet standards of quality, taste, appearance, and freshness.  Meets production deadlines, demonstrates cost conscious behaviors, and initiates advance prep as appropriate.  Communicates with supervisor and co-workers.  Adheres to FDA Food Code standards for food handling and storage.  Maintains clean work area and restocks as needed throughout shift.  Monitors and records product temperatures and holding times to ensure compliance with HACCP guidelines.
