POSITION DESCRIPTION

POSITION SUMMARY:

Reporting to the Executive Chef - Catering Operations, this position is responsible for preparing food for special occasions, celebrations and business meetings. The Sous Chef will oversee the daily operations of the kitchen and its staff to ensure the highest level of customer satisfaction, service and food quality are met.

ESSENTIAL FUNCTIONS:

The essential functions of the position include, but are not limited to:

  1. Prepares quality dishes and presents them in an attractive manner.
  2. Manages the daily kitchen operations including planning, scheduling and ordering of necessary ingredients for functions.
  3. Follows proper food handling and storage standards. Ensures kitchen staff adheres to such guidelines. Maintains a safe, sanitary and organized work area.
  4. Trains new hires and coaches those who need development in efforts to improve their knowledge or skills.
  5. Effectively handles problems related to food shortages, food preparations and extra guests.
  6. Maintains the inventory of goods in chill, freezer and dry/canned goods on a weekly basis. Ensures the inventory data on the Crunchtime software is accurate.
  7. Modifies and creates catering menu items to ensure A Catered Experience consistently meets guests’ expectations.
  8. Performs duties as assigned by management.

QUALIFICATIONS:

Scheduling:

  • Must be able to work flexible shifts according to the needs of the assignments and/or catering or banquet functions.

Physical Ability:

  • Must be able to lift up to 50 pounds
  • Reaching/bending frequently
  • Good speech and hearing necessary for communicating with other employees, managers, and the public.

Mental Ability:

  • Action-oriented (exercising initiative to follow-up and follow through)
  • Detail-oriented
  • Reading, writing, and oral proficiency in the English language required

Pre-Employment Requirements:

  • Must pass drug screening test and physical exam
  • Must have passed a TB test within 5 years of start date with skin test or chest x-ray
  • Must have valid current Hawaii State Driver’s License and clean driver’s abstract.

Environmental Conditions:

  • Outside and Indoor Functions
  • Working in extreme temperatures from a hot kitchen to chill and/or frozen room.

Education:

  • High school diploma or GED required
  • Culinary arts training at community schools with a completion certificate.

Experience:

  • Minimum of two (2) years of Sous Chef experience.
