MML Hospitality is a boutique hospitality group driven by design, exceptional product quality, and memorable dining experiences. From neighborhood cafes and all-day bakeries to fine dining and boutique hotels, we bring passion and craft to everything we touch. We are seeking a talented Pastry Chef & Baker with a strong emphasis on scratch baking, dough work, and refined pastry to join our culinary team in California.

Position Overview

This role combines the precision of artisan bread and viennoiserie baking with the artistry of fine pastry work. You will be responsible for daily scratch productionโ€”ranging from naturally leavened doughs, brioche, and laminated pastries to seasonal tarts, cakes, and plated dessertsโ€”ensuring every item meets MMLโ€™s high standards of quality and visual appeal.

Key Responsibilities
read & Bakery Production (Primary Focus)
  • Dough Craft: Oversee scaling, mixing, proofing, shaping, and baking for artisan loaves, sourdoughs, brioche, and laminated doughs (croissants, danishes).

  • Oven Management: Monitor proofing environments and operate commercial deck and convection ovens to achieve consistent bake, crust, and crumb structure.

  • Prep & Finishing: Hand-shape, score, and bake high-volume batches while maintaining immaculate presentation.

Pastry & Kitchen Operations
  • Pastry Craft: Prepare scratch fillings, curds, creams, mousses, glazes, and tart shells according to standardized MML recipes.

  • Seasonal Menus: Collaborate with leadership on seasonal menu changes, testing new recipes, and managing product waste.

  • Kitchen Standards: Maintain a clean, organized, and sanitary station adhering to California Health Department guidelines and MML kitchen policies.

Qualifications & Requirements
  • Experience: 2+ years of professional baking and pastry experience in a high-volume scratch bakery, hotel, or elevated restaurant setting.

  • Technical Mastery: Strong understanding of bakerโ€™s percentages, hydration, yeast/sourdough fermentation, lamination, and pastry fundamentals.

  • Work Ethic: Thrives in a fast-paced environment, maintains intense attention to detail, and brings a team-first attitude.

  • Physical Demands: Ability to stand for 8+ hours, perform repetitive shaping movements, and lift up to 50 lbs (bags of flour, dairy, dough containers).
