Food Operations refer to the management and execution of activities involved in preparing, cooking, serving, and delivering food within various settings such as restaurants, hotels, cafeterias, or catering services. These operations encompass everything from sourcing ingredients and maintaining food safety standards to overseeing staff and ensuring customer satisfaction. Food Operations professionals play a critical role in ensuring efficiency, quality, and compliance with health regulations in food service establishments.

What are some common challenges faced in a Food Operations role and how can they be managed effectively?

One of the most common challenges in Food Operations is maintaining consistent food quality and safety standards while working in a fast-paced environment. This often requires strong attention to detail, effective communication, and the ability to quickly solve problems as they arise. Job description

Role Overview
Lead healthcare dining operations that make a difference every day.
Sodexo is seeking an experienced Food Operations Manager 3 to join our team at NYC Health + Hospitals/Gouverneur, a 295-bed long-term care and rehabilitation facility located on Manhattan's Lower East Side.
Gouverneur is home to one of the largest rehabilitation programs within the NYC Health + Hospitals system, with 100 dedicated rehabilitation beds serving a diverse patient population. Unlike many healthcare facilities, Gouverneur utilizes a decentralized dining model, with dining rooms located on each patient floor and a traditional cook-serve food production system, offering both American and Asian menu selections to meet the needs of its diverse residents.
This is a highly visible leadership role responsible for overseeing daily food service operations while leading a team of approximately 45 union frontline employees. The successful candidate will partner closely with the Patient Services Manager and hospital leadership to deliver exceptional resident dining experiences, operational excellence, and regulatory compliance.
Conveniently located in Manhattan, the facility is easily accessible by public transportation.
What You'll Do
As the Food Operations Manager 3, you will:
  • Provide leadership for all daily food service operations, including food production, patient dining, and decentralized meal service
  • Lead, coach, mentor, and develop approximately 45 union frontline employees
  • Oversee kitchen production, food quality, meal presentation, and service consistency
  • Partner closely with the Patient Services Manager to ensure exceptional resident satisfaction and operational performance
  • Ensure compliance with HACCP, food safety, sanitation, infection prevention, and regulatory standards
  • Manage employee scheduling, labor performance, productivity, and departmental budgets
  • Monitor operational KPIs and implement continuous improvement initiatives
  • Build strong working relationships with hospital leadership, clinical teams, and client stakeholders
  • Foster a culture of accountability, teamwork, safety, and service excellence

What We Offer
Compensation is fair and equitable, partially determined by a candidate's education level or years of relevant experience. Salary offers are based on a candidate's specific criteria, like experience, skills, education, and training. Sodexo offers a comprehensive benefits package that may include:
  • Medical, Dental, Vision Care and Wellness Programs
  • 401(k) Plan with Matching Contributions
  • Paid Time Off and Company Holidays
  • Career Growth Opportunities and Tuition Reimbursement

More extensive information is provided to new employees upon hire.
What You Bring
The ideal candidate will have:
  • Bachelor's degree or equivalent combination of education and experience
  • At least three years of progressive management experience in food service operations
  • Proven leadership experience managing large frontline teams
  • Strong operational knowledge of food production and kitchen management
  • Excellent communication, coaching, and employee development skills
  • Financial acumen, including budgeting, labor management, and operational reporting
  • A hands-on leadership style with the ability to thrive in a fast-paced healthcare environment
Preferred Qualifications:
  • Long-term care or healthcare food service management experience
  • Experience managing unionized employees
  • Experience overseeing decentralized dining or resident meal service programs
  • Strong food production and kitchen operations leadership
  • Experience managing sub-acute rehabilitation or skilled nursing food service operations
  • Familiarity with healthcare regulatory standards and quality improvement initiatives
