Job description

Job Type
Full-time
Description
Umami Riot was born from a simple idea: pair joyful hospitality with uncompromising craftsmanship. Founded by Chef Tim Cushman and sake expert Nancy Cushman, our restaurants celebrate bold flavor, precision, and a deep respect for Japanese foodways - translated through a distinctly Boston lens. At Umami Riot, we're not here to follow the rules of hospitality, we're here to rewrite them - with heart, craft and fearless creativity.
Bianca is a vibrant blend of wood-fired cooking, craft cocktails, and warm, modern hospitality - and we're searching for someone who brings that same energy. At Bianca, we do more than serve food and drinks - we create moments. Whether it's a weeknight pizza and cocktail or a celebratory dinner, every guest experience is shaped by our team's attention to detail, warmth, and commitment to excellence.
We're looking for an Executive Chef who owns the room, commands the kitchen, and sets a standard others must rise to. You lead from the front - shaping people, systems, and execution with intention - and you expect the kitchen to meet you there.
THE GIG (AKA WHAT YOU'LL ACTUALLY BE DOING)
  • Culinary authority with full command of standards, execution, and consistency - vision translated into repeatable excellence, every service
  • Tone-setting leadership from the top, holding the bar high and refusing to let food, systems, or culture drift
  • Total ownership of the culinary operation, aligning FOH and HOH leadership to deliver seamless, elevated guest experiences
  • Disciplined command of service, menu rollouts, seasonal changes, and culinary initiatives executed with intention and control
  • Strong operational instincts guiding food and labor costs, P&L awareness, systems development, and pristine kitchen organization and sanitation
  • High-performance culture built through clear expectations, leadership development, culinary education, and composed execution of events - with visible presence on nights, weekends, and moments that matter

THIS ROLE IS A GREAT FIT IF...
  • You're a commanding, hospitality-driven leader with a clear point of view
  • You thrive where creativity, accountability, and execution collide
  • You lead with confidence and clarity - not ego
  • You expect excellence and give your team the structure to achieve it
  • You think beyond the pass: labor, food cost, systems, and longevity matter
  • You take pride in building teams that outperform and outlast
  • You want full ownership of the kitchen - culture, product, and results

Requirements
LET'S SET EXPECTATIONS (IN A GOOD WAY)
This is a fast-paced kitchen fueled by movement, heat, music, and momentum, where you're on your feet, working with knives, fire, and focus throughout each shift.
Yes - this is a hands-on role. You'll be active for long shifts, lifting up to 50 lbs., bending, reaching, and moving easily through tight spaces. A disciplined commitment to sanitation, safety, and cleanliness is part of the craft here, and we're committed to providing reasonable accommodations to support individuals in performing the essential functions of the role.
WHY PEOPLE STICK AROUND
  • Competitive pay - because your work matters
  • Dining discounts across all Umami Riot locations
  • Growth that's real (not just talked about)
  • A team culture rooted in respect, creativity, and heart

Pay Range $85,000-$100,000 based on experience
