What you get to do:
The Executive Sous Chef oversees all daily Culinary Operations of Restaurants, Carts & Kiosks, Specialty Snacks, Catering, & Special events while also managing all kitchen (back of house) staff and being responsible for producing a cost-effective, high-quality product in all locations.
You will also:
  • Partner with the Vice President of Revenue to lead, develop, and oversee the Culinary Management team.
  • Oversee daily Culinary Operations
  • Be accountable for overall food cost and food inventory levels along with food safety protocols and cleanliness
  • Responsible for food cost and recipe management including menu design, planning and operational execution
  • Engage with social media marketing department to create fun, creative items to market to guests.
  • Lead menu planning and seasonal food items
  • Cover Culinary Department Duty Manager
  • Be responsible for food inventories in-Park and in the warehouse
  • Be responsible for training of new cooks and team members
  • Be involved in event menu planning & execution

  • Driver's license required
  • Minimum of 3 years in culinary leadership
  • Advanced knowledge in Food Cost Management
  • Advanced knowledge in Menu Engineering
  • Experienced in Inventory management control
  • Advanced knowledge of Food & Safety standards and protocols
  • Intermediate knowledge of Microsoft programs such as Excel and Outlook
  • Advanced knowledge of Food Cost & Inventory Management
  • Advanced knowledge of menu planning and engineering
  • Advanced knowledge of Inventory management control
  • Advanced knowledge of Culinary Food & Safety Protocols
  • Role will be active in park work indoors and outdoors moving from venue to venue. Administrative and strategic menu work in an office setting as required.
  • Ability to stand, walk, and move swiftly for several hours at a time; and required to lift up to 50 lbs.
  • Ability to work evenings, weekends and holidays and be available for on call status as needed.
  • Ability to travel to other park locations
  • Adherence to the Parks time and attendance policy
  • 3+ years experience in a high volume atmosphere preferred
  • Experience as a Chef managing multiple outlets preferred
  • Advanced experience in running a Culinary "Back-of-house" P&L preferred
  • Experience as a Chef or Sous Chef in a Theme Park or Amusement park atmosphere preferred
