JOB DESCRIPTION LOCATION: Gianni's at the Former Versace Mansion POSITION: LINE COOK - Hot Line / Cocina Caliente (Experienced Only) DEPARTMENT: Kitchen REPORTS TO: Executive Chef Full-Time | Fine Dining | High-Volume Service About the Position Gianni's at the Villa Casa Casuarina is seeking an experienced Line Cook to join our high-volume, fine-dining kitchen. This is not an entry-level role. Our line regularly handles 500-800 covers in a single night, and we need cooks who can execute with speed, precision, and consistency.

Responsibilities Set up and maintain the hot line station (grill, saute, fry, or assigned station). Cook menu items to order with full consistency, accuracy, and speed. Execute sauces, proteins, vegetables, and sides following established standards.

Read tickets quickly and work clean under pressure during intense service. Assist in prep production, batch cooking, and organization for high-volume service. Maintain a clean, organized workstation at all times.

Follow food-safety, sanitation, and FIFO standards. Communicate effectively with the culinary team to ensure smooth service. Assist with large banquets, events, and VIP dinners.

Requirements Minimum 1-2 years of line cook experience (fine dining or high-volume strongly preferred). Ability to work fast, clean, and organized during heavy service. Strong understanding of cooking techniques (searing, saute, grilling, frying, roasting).

Ability to handle high-pressure, high-ticket environments. Punctual, reliable, and professional. Must be available evenings, weekends, and holidays.
