 Bakery Production Manager Scratch Bakery Café
Scratch Bakery Café is seeking an experienced Bakery Production Manager to lead and scale production for our growing artisan bakery café.
We are a family-owned, scratch-made operation producing laminated pastries, artisan breads, cakes, cookies, and café pastries for both retail and wholesale. As we expand, we are looking for a strong leader who can bring organization, structure, and efficiency to our production while maintaining the quality and craftsmanship of a true scratch bakery.
This role is ideal for a hands-on production leader who thrives in high-volume environments and enjoys building systems, training teams, and scaling operations.
Position Overview
The Bakery Production Manager oversees all bakery production operations, including staff leadership, production planning, quality control, and operational scaling.
This is a working leadership role—you will be actively involved in production while leading the team to ensure consistency, efficiency, and high standards.
Key Responsibilities
 • Lead and manage a production team (currently ~10 staff, growing)
• Oversee daily production across all product categories
• Manage production of breads, laminated pastries, cakes, cookies, and café pastries
• Develop and manage production schedules and workflow systems
• Hire, Train, mentor, and hold staff accountable to performance standards
• Maintain product consistency and quality across all offerings
• Scale production systems to support business growth
• Manage ordering, inventory, and ingredient control
• Collaborate with Executive Pastry Chef and team on recipe development and refinement
• Ensure compliance with food safety and sanitation standards
• Participate in hands-on production
Schedule
• Full-time position
• Overnight production schedule
• Workweek typically consists of 5–6 days based on business needs and production demands
• Scheduling will be structured in compliance with California labor laws
Qualifications
• Minimum 5 years of bakery production experience
• Proven experience managing teams in a bakery or high-volume kitchen
• Strong leadership and team development skills
• Experience building systems and scaling production operations
• Strong organizational and communication skills
• Hands-on experience with artisan bread and laminated pastry production
• Ability to work overnight shifts consistently

Compensation & Benefits
Salary: $75,000 – $90,000 annually, depending on experience
