Reports To: Executive Sous Chef
Location: Bishopโ€™s Orchards Farm Market โ€“ Guilford, CT

Position Overview

Bishopโ€™s Orchards is seeking an experienced and motivated Bakery Production Manager to lead and support our bakery production team in a high-volume, fast-paced environment. This hands-on leadership role is responsible for overseeing daily bakery production, supervising team members, maintaining quality and food safety standards, and ensuring efficient operations across the department.

The ideal candidate must have previous bakery production experience and strong leadership skills, with the ability to manage production flow, inventory, team development, and product quality while helping create an organized, positive, and high-performing bakery environment.

This position supports the Culinary Operations Manager and Executive Chef to ensure the smooth day-to-day operation of the bakery department. Please note: this is not a nut-free environment.

Responsibilities & Duties

  • Oversee and participate in daily bakery production including breads, breakfast pastries, cookies, pies, cakes, donuts, bars, batters, and seasonal specialty items
  • Supervise, schedule, train, and delegate tasks to Bakery Team Members
  • Create and execute daily production lists in collaboration with bakery leadership
  • Ensure all products meet Bishopโ€™s Orchards quality, freshness, consistency, and presentation standards
  • Maintain clean, organized, and well-stocked bakery displays, storage areas, walk-ins, coolers, and freezers
  • Monitor inventory levels, product rotation, and production needs throughout the department
  • Follow and enforce FIFO procedures, food safety standards, sanitation requirements, and HACCP guidelines
  • Ensure all prepared and packaged items are properly labeled, dated, rotated, and stored
  • Train and mentor bakery staff in proper baking techniques, safety procedures, and company standards
  • Assist with recipe execution, recipe development, and seasonal product planning
  • Conduct production forecasting and planning for holidays, weekends, and special events
  • Maintain production records, inventory logs, and operational documentation
  • Monitor equipment cleanliness, maintenance, and safe operation
  • Support customer service needs including answering product questions and assisting with special orders
  • Foster a positive, respectful, and team-oriented work environment
  • Communicate operational needs, concerns, and staffing issues to bakery and culinary leadership
  • Assist with opening and closing procedures as needed
Requirements:

Qualifications

  • Previous bakery production experience is required
  • Minimum of 2 years bakery, baking, or high-volume production experience preferred
  • Prior supervisory or leadership experience strongly preferred
  • Knowledge of breads, pastries, pies, cakes, cookies, breakfast items, and production baking techniques
  • Ability to follow detailed recipes and production procedures accurately
  • Strong organizational, time management, and multitasking skills
  • Ability to lead, train, and motivate a team in a fast-paced environment
  • Knowledge of food safety, sanitation, HACCP, OSHA, and bakery safety standards
  • Comfortable working with commercial bakery equipment and production environments
  • Strong communication and interpersonal skills
  • Basic computer and Microsoft Office skills preferred
  • Ability to lift up to 50 lbs and stand/walk for extended periods
  • Weekend and seasonal availability required
  • Spanish language skills are a plus
