JOB SUMMARY

The Pitmaster will oversee the entire smoking process of all meats for our 1886 Grill. You will help supervise the kitchen staff and ensure that service standards are consistently being met. The Pitmaster will ensure food quality by fostering a cohesive team dynamic, prioritizing prompt, courteous, and accurate service delivery.

ESSENTIAL JOB FUNCTIONS
    • Manage all aspects of the barbecue cooking process, including meat selection, seasoning, smoking, and serving.
    • Monitor and maintain the smoking equipment to ensure consistent temperature and smoke levels.
    • Ensure cleanliness of smoking equipment and outdoor kitchen area
    • Develop and execute recipes and seasoning blends to enhance the flavor of our barbecue dishes.
    • Ensure food safety and sanitation standards are consistently met.
    • Train and supervise kitchen staff to ensure quality and efficiency in food preparation.
    • Collaborate with management to develop menus and specials that highlight our barbecue offerings.
    • Maintain inventory levels and order supplies as needed.
    • Provide excellent customer service and engage with patrons to promote our barbecue offerings.
    • Ensures compliance with all health, safety, and sanitation regulations and standards..
    • Collaborates with the Executive Chef and kitchen staff to ensure timely and accurate food preparation, presentation, and service.
    • Ensures meat preparation is satisfactory for special events, banquets, and catering functions, ensuring seamless execution and customer satisfaction.
    • Effectively communicates policies and procedures to subordinates.
    • Completes all required Company training/compliance courses as assigned.
    • Adheres to Company standards and maintains compliance with all policies and procedures.
    • Must have professional appearance that is compliant with company brand.
EDUCATION
  • Bachelor's degree in Hospitality Management or Business Administration from an accredited university or equivalent in related field.
EXPERIENCE
  • A minimum two (2) years of experience as a Pitmaster or related field
  • A minimum one (1) year of supervisory experience in a similar role in the Food and Beverage industry field required.
SUPERVISORY RESPONSIBILITIES

Provides immediate supervision to direct reports. Oversees and controls the work performance of others in a close working relationship, often in the same room or close proximity. A portion of the time may be spent performing individual tasks similar to those performed by direct reports. May participate in the interview, selection and training processes as assigned. May be responsible for assigning work to direct reports, reviewing results in accordance to policies and procedures, and providing recommendations to management.

LICENSES & CERTIFICATIONS
  • Food Handler's Card - must be state/county-specific.
  • Alcohol Awareness Training Certification - must be state/county-specific.

This position requires the capability to understand and follow both oral and written directions, as well as, knowledge and usage of correct business English and office practices. PHYSICAL DEMANDS
  • Stooping: Bending body downward and forward by bending spine at the waist. Specifically, if it is to a considerable degree and requires full motion of the lower extremities and back muscles.
  • Kneeling: Bending legs at knee to come to a rest on knee or knees.
  • Crouching: Bending the body downward and forward by bending leg and spine.
  • Reaching: Extending hand(s) and arm(s) in any direction.
  • Standing: Particularly for sustained periods of time.
  • Walking: Moving about on foot to accomplish tasks. Specifically, for long distances or moving from one work site to another often.
  • Pushing: Using upper extremities to press against something with steady force in order to thrust forward, downward, or outward.
  • Pulling: Using upper extremities to exert force in order to draw, haul, or tug objects in a sustained motion.
  • Lifting: Raising objects from a lower to a higher position or moving objects horizontally from position-to-position. Specifically, if it occurs to a considerable degree and requires substantial use of upper extremities and back muscles.
  • Grasping: Applying pressure to an object with the fingers and palm.
  • Feeling: Perceiving attributes of objects, such as size, shape, temperature or texture by touching with skin, particularly that of fingertips.
  • Talking: Expressing or exchanging ideas by means of the spoken word. Those activities in which they must convey detailed or important spoken instructions to other workers accurately, loudly, or quickly.
  • Hearing: Perceiving the nature of sounds at normal speaking levels with or without correction. Ability to receive detailed information through oral communication, and to make the discriminations in sound.
  • Repetitive Motion: Substantial movements (motions) of the wrists, hands, and/or fingers.
  • Close Vision: Clear vision at 20 inches or less. Required to perform an activity such as preparing and analyzing data, transcribing, viewing a computer terminal, extensive reading or visual inspections.
  • Color Vision: Ability to identify and distinguish colors.
  • Medium Work: Exerting up to 50 pounds of force occasionally, and/or up to 30 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects.
WORK ENVIRONMENT
  • Extreme Heat, Outdoor: Exposure to weather related extreme temperatures, wind, and/or humidity with no effective protection from the heat.
  • Excessive Noise: Exposure to sufficient noise (caused by machines, music, voices, etc.) which warrants shouting in order to be heard above ambient noise level.
  • General Hazards: Exposure to a variety of physically hazardous conditions, such as proximity to moving mechanical parts, moving vehicles, electrical current, working with explosives, on scaffolding, and/or high places.
